Baby Rice Rusks

  • 125 g rice
  • 1 banana, approx 125g, peeled

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180C and line a baking tray with baking paper.

  2. Weigh rice into mixing bowl.

  3. Mill 30secs/speed 9 stopping every 20 secs to push grains from the top of the lid back into the bowl.

  4. Repeat Step 2 until rice grains are a fine powder.

  5. Break Banana into peices and add to the mixing bowl and mix 10 secs/speed 5.

  6. Transfer mixture to a separate bowl.

  7. Form mixture into 8 - 10 8cm long log shapes and place on baking tray. 

  8. Place in the oven for 30 minutes or until golden brown and cooked through.

  9. Allow to cool completely before giving to your little one to enjoy tmrc_emoticons.-)

Tip

1. Use any type of rice for this recipe.

2. Substitute banana for fruit of your choice (pureed would work best).

3. Form mixture into any shape you like.

4. Store in an airtight container for up to three days.

    I used mango and banana - found it to be chewy on the inside. Is this the consistency or is it suppose to be harder - like the store brought ones. Maybe need to add more rice for a harder consistency.

    Sooo quick and easy. I used basmati rice and did not super fine mill it as 9 month old grandson's teeth producing gums need a bit of a rub.
    Husband and I tasted one before giving it to our treasure and thought it thoroughly awful, thankfully, little one loved it and gnaws on it constantly. It must feel great on his sore gums.
    I sent a few home with health conscious Mum who is delighted with them, and froze a few. I'll be making a whole heap more of these.

    That is a very good question... frozen banana whips up nicely like ice cream but im not sure what would happen when you bake it.

    I guess that as long as you can get the right consistency with the frozen banana and the rice mix then it should still bake fine although it would still depend on the stage of the banana when frozen.

    Generally, the riper the banana when frozen the more moisture it seems to have when defrosted/used. If this was the case then I would add more rice to keep the consistency of rusks.

    It would be great to hear your results if you do try with your frozen bananas

    ajbrown, I always rolled mine into logs and then cut this into the size bars that I was wanting (as my boys grew I made them larger). After cutting the log I found I could further shape them if I was not happy with the form. I hope this helps you and I would love to hear how you go next time

    I would think that they should work just fine however you would probably not need to mill either of them for as long as rice. I would love to hear if you tried this and how it worked for you though

    You could certainly mill the rice to make it finer if you prefer a smoother texture. I did want to make them quite rustic and less like store bought ones to try and make them last longer so my son had to actually chew on them. Thanks for trying them out and let me know if you achieve a more suitable texture

    Great recipe!  I have made a few times now with medium grain brown rice and always make a double batch.  A double batch for me normally yields 26 sticks as I make them a little smaller.  I then reduce baking time to only 20mins.
