  • 1 banana, Cut into thirds
  • 2 eggs
  • 60 grams olive oil
  • 60 grams Honey or Maple Syrup
  • 1 teaspoon vanilla extract
  • 90 grams brown sugar
  • 260 grams Self Raising Flour
  • 2 teaspoons cinnamon
  • 1/4 teaspoon bicarb soda

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1- Preheat oven to 180 degrees and grease muffin tray
  2. 2- Add apples to bowl chop 3 seconds speed 6
  3. 3- Add banana, mix 3 seconds speed 4
  4. 4- Add eggs, oil, honey, vanilla and brown sugar. Mix 10 seconds speed 3
  5. 5- Add flour, bicarb and cinnamon. Mix 10 seconds speed 4. Scrape sides of bowl. Mix 5 seconds speed 4
  6. 6- Spoon into prepared muffin trays and bake for 12-15mins

    Only had 40gms maple syrup in the cupboard and used 30gm sugar, still taste really good! Also used wholemeal flour.
    Will definitely make again.

    Made 24 mini and 6 normal size from this recipe.

    Flavour was delicious but I found them a little gluggy. Possibly because I only had frozen bananas. It made 12 large and 12 tiny muffins. I put chocolate chips on the top of the tiny muffins and they were especially yummy. I used maple syrup so cut sugar down to 50 grams. Plenty sweet enough 😃

    These were really nice. I had some ripe pears so I used them instead of the apple and they turned out lovely. I diced the pear by hand and added it to the mix at the end with the dry ingrediants.

    Nice recipe 😀 I haved the mixture (half a banana and 2 small green apples- peeled). Made 24 mini muffins (cooked 12 mins). I used honey, but might try with less sugar next time.

    I halved the recipe and made 23 mini muffins and cooked for 12 minutes. Next time i will put less maple syrup in and will blitz the apple for longer as i left the peel on so think a little longer will help to desolve it more. Will be making again.

    Thanks for sharing such an easy & delicious recipe! I have baked these up as lunchbox treats for my girls.

    I only had 2 apples to use & I didn't peel them, plus I used raw sugar instead of brown & oh my, they are so delicious! I found my cook time was much shorter than stated though. Mine were done at 10 minutes. Any longer & they would have been burned & lost their softness.
