Bacon and Cheese Macaroni Muffins (Clone of Macaroni Muffins)

Ingredients

12 portion(s)

Macaroni Muffins

  • 900 grams water
  • 180 grams macaroni
  • 120 grams bacon, roughly chopped
  • 80 grams brown onion, roughly chopped (about one small)
  • 2 teaspoons olive oil, or any cooking oil you like
  • 110 grams Milk
  • 2 eggs
  • 160 grams grated cheese

Recipe's preparation

  1. Pre heat oven to 200 degrees and grease a 12 cup muffin tray.

    Add 900g of water and cook 6min/100deg/Speed 1 (this is to get water hot to cook pasta) 

    Add the 130g of Macaaroni to the water 8-10min/ Counter-clockwise operationGentle stir setting/100deg

    Drain pasta using basket and set aside. 

    Rinse and wipe out mixing bowl.

    Add Onion, Bacon and Oil chop 3sec/sp7. Scrape down sides, if needed, repeat.

    Saute 3min/Varoma/Speed 1.

    Add the grated cheese, milk and egg. Mix 10sec/ Speed 3

    Add cooked macaroni to mix and 10sec/speed 2 Counter-clockwise operation

    Spoon this mixture into greased muffin tray (don't forget to grease it or everything gets stuck!)

    Bake for 20 minutes then let cool and enjoy.

Tip

If using Thermomix to grate cheese - cut into cubes and grate 10sec/sp9

These are great in lunchboxes and freeze well.

Experiement with some spices to get a different taste sensation!

    Wow, these are SO good! and so easy! Perfect snack for my 10 month old. I added diced capsicum and spring onion but will add more vegies next time, perhaps grated carrot and a little less cheese.

    These were awesome although I tweeked the recipe a bit using left overs.  Instead of milk I used my cheesy white sauce left over from macaroni I cheese... I reckon they would be good with salmon in them.....thanks for sharing tmrc_emoticons.;)

    I threw in a clove of garlic and sprinkled with parmesan, also added an extra egg. So yummy! I cooked my pasta in the thermoserver (as per thermofuns   http://thermofun.com/thermofun-cooking-pasta-thermoserver/     to save on the rinsing of the bowl tmrc_emoticons.)

    These are absolutely delicious! Having said that, next time we will try as a slice, using baking paper (the mix REALLY sticks to the muffin tray, even when oiled) just for ease of serving, and perhaps mixing up the ingredients a little. Delicious as per the recipe, but would love to try with tinned corn and maybe peas. Otherwise, chives addded to original recipe would be terrific, and I think spring onions in place of the onions would work, too! Such a versatile base, and we will make this time and time again!

    Just did these & now in the oven but made a mistake & was reading the preparation & only put 130gms of pasta but later saw ingredients say 180gms

    mac & cheese always a winner in our house I'm sure this will be too tmrc_emoticons.)

    I made these for my kids and they loved them. I just made a second batch and I put the mixture in to cupcake cases for the kids lunch boxes. I greased them well with spray oil and they didn't stick at all   Cooking 7
