To Make
- 1 small zucchini
- 1 carrot
- 1 potato
- 1 onion or 5 spring onions
- a few sprigs of parsley
- 6 pieces short cut bacon, diced or chopped in TM
- 150 g grated cheese
- 20 g Milk
- 2 eggs
- 180 g SR flour
- 1 tablespoon Concentrated vegetable stock

Recipe's preparation
Preheat oven to 180 degrees. Line two baking trays with baking paper.
Place vegetables, spring onions and parsley in bowl.
Blitz on speed 9 for 4-5 secs. You want the vegetables to be fine but have some texture to them. You don't want pureed vegetables.
Add remaining ingredients.
Blitz on speed 5 for 10 secs or until just combined. If the mixture is too dry add a little more milk.
Spoon heaped teaspoons of mixture on to baking trays. This makes 30 bites.
Bake for 15 minutes or until slightly golden on top.
Serve warm or cold.

Easy and delicious. I ran out of baking paper so used foil. They did stick badly to that, I should have oil sprayed it first! Anyway, I just transferred the foil to a cooling rack, and peeled foil carefully away once they were cool.

I have been informed by my 7 year old daughter that these need to be in her school lunchbox every day. Um, ok! I also gave one to my zucchini hating friend and she ate 5. Told her after about the zucchini after and she was amazed she couldn't tell. The joys of hiding vegies. YAY! Thanks

These were awesome! I made a few tweaks, which I'll definitely stick with in the future. I used a small sweet potato in place of a normal potato. I think this made my batter runnier so I added another 50g or so of flour. Mine also made about 50 bites,but not complaining, my family INHALED them!!! I've always been really bad at making savoury eggy/floury dishes but these turned out perfect! Thanks for sharing! !
