Bacon & Veg Mini Quiches

  • 100 grams mexican blend (or any) cheese, grated
  • 125 grams bacon, finely chopped
  • 1 red capsicum, de-seeded
  • 1 zucchini, roughly chopped
  • 1 red onion, peeled and quartered
  • 150 grams mushrooms
  • 150 grams flour
  • 3 tsp baking powder
  • 5 eggs
  • pepper, to taste

Recipe's preparation

  1. 1. Preheat oven to 1802. Place all veggies into TM bowl.  Speed 5 until finely chopped.  3. Tip veggies into large bowl.  Add cheese and bacon to veggies.4. Add flour, baking powder, eggs and pepper to TM bowl.  Mix 20 seconds Counter-clockwise operation on speed 4.  Scrape down sides,  mix again until just mixed.  5.  Add egg mixture to bowl with veggies, bacon and cheese.  Mix thoroughly.  6.  Line muffin tins with muffin papers (or just grease well but mine stuck so I'll be using paper next time!).  Spoon about 1/4 cup of the mixture into each muffin paper. 7.  Bake 20ish minutes or until lightly golden.
