Breakfast Bites

Ingredients

14 portion(s)

  • 1 clove garlic
  • 1/2 onion, (optional)
  • 100 g long rashers rindless bacon, (optional)
  • 300 g potatoes, (peeled and chopped roughly)
  • 125 g Tasty cheese, (chopped roughly)
  • 3 eggs
  • salt and pepper to taste

Recipe's preparation

  1. 1. Preheat oven to 180 degrees and grease a mini muffin pan. 2. Place garlic bacon and onion in TM bowl on speed 7 for 3 seconds.  3. Add potatoes and cheese, chop on speed 5 for 10 seconds.  4. Add eggs and salt and pepper to taste, mix Counter-clockwise operation speed 2 for 20 seconds (or until combined).  5. Spoon into mini muffin tins and bake for 20 – 25 minutes or until golden brown and tops and edges begin to get crispy.

Tip

Eat warm, or cool and freeze into individual packs and heat for about 20 seconds in the microwave. Breakfast is made for the whole week!

I used a silicone muffin tin for these ones and they came out fine, will most likely stick to metal muffin tins.  Also letting cool for 5-10 minutes in the muffin form helps with removal

    Yum. Simple and delicious. Made 12 muffins in silicone muffin cases. Made 4 vege - added sundried toms - and rest as per recipes. Added thyme and oregano and fried bacon onions and garlic first. 3 of us scoffed the lot in one sitting 👌

    Delicious and easy to make. Sauteed onion, garlic and bacon as suggested by others. Will try adding herbs i.e. parsley or basil and replacing bacon with fetta next time.

    Delicious! Didn't add onion and sautéed bacon & garlic as other suggested. I didn't have any issues with them sticking. Used silicone tray for the large ones and normal non-stick for the mini. I'd already eaten 3 mini ones when I took the photo.

    I have made these a couple of times now, for funerals that my hospital auxiliary catered for. They were very popular. I am going to try sautéing the bacon etc next time, but I found them very tasty.

    Delicious, is on my favourite list from now on!

    The only changes: I substituted potato with sweet potato and used 5ml stock instead of salt.

    Made 12 muffin sized savoury muffins.

    TIP: As has been suggested, using silicone muffin cups or lining the holes with silicone paper may be a better idea for next time.

    Great thanks! Super easy to make and cook. I'll try adding a few extra ingredients next time like some grated zucchini and chopped mushrooms. But they are still delightful as per the recipe above. Thanks for sharing.

    These are a delicious easy brekkie. Thank you! I substituted half the potato with zucchini and used an extra egg and spinach. I also use patty pans in the muffin tray so they are easy to whip out and freeze/put away for quick brekkies.

    These are just sooooo good.  I have to continually make a batch as my daughter only likes these for breakfast now, but they are so yummy that they get eaten very quickly.  They are ok cold, but much nicer when warm.  Thanks for the recipe.

    Thanks for the recipe. I used pumpkin (that's all I had), and a handful of kale. I also sauteed the onion and garlic for 4 mins on varoma, then allowed it to cool before proceeding.  I used silicone muffin pans and they didn'to stick at all. Very easy and tasty!

    I tried twice. The first time was a little hard to get out of a silicon tray. Second time I rinsed the tray with water before putting mixture in. Second time was better. Only one out of 4 in house liked them though. Maybe less onion next time and process potato more.

    Just made these for the 2nd time and used a silicone muffin tin this time which has worked a treat. I also popped them out and turned them over, returning to the oven for a bit to cook the bottom more. Wouldnt use a metal tin for these. Again used half sweet potato and delicious!

    Delicous breakfast, lunch or anytime bites - they didn't last long at all! I didn't include the garlic and used half sweet potato and half white. Unfortunately like others, mine stuck terribly to my pans even though they were greased and semi-lined, so I'd use muffin cases next time to avoid this happening again.     Delicious but mine took much longer to cook (in the mini muffin pan), stuck to the (well greased) pan, and were still soggy on the botton though golden brown on the top. Maybe the type of potatoes I used? Anything to do with storing the potatoes in the fridge?

    WARNING - do not plan ahead and make them in the evening for breakfast, because I can guarantee they won't last that long!!!

    After the spoilt brats did they're usual vomiting faces complete with noises when they saw them come out of the oven crying "yuck they're not chocolate cakes" (fixed them good and proper - then made  the magic bean cakes, they all detest beans - I laugh when they scoff them down).  So, I take a couple with me to watch TV, hubby (the most fussiest eaters) gets up and has one. The three spoilt brats are watching wide eyed, I think they're expecting us to start fitting and pass out or maybe they were hoping for an explosion (that seems the in thing at the moment), when neither of us passed out or exploded I heard 30 little toes heading for the kitchen. Well they all vanished in two add breaks and it wasn't the dog 'cause he was curled up snoring  in the beanbag.

    Thanks heaps, great recipe - lesson learnt: dont use the biggest clove of garlic, was a tad strong. 

    I'm in going to remake them this morning with a tad more bacon, sweet potato (as I have lots) and add some Parmesan cheese.

    These tasted great! I took another users advice and sautéed the onion, garlic and bacon while preparing everything else. I found them a tad salty so next time I won't add any extra salt, there is enough in the cheese and bacon.
