Buckwheat savoury muffins

Ingredients

Muffins

  • 250 grams buckwheat kernals
  • 60 grams parmesan cubed
  • 1 carrot, Roughly chopped
  • 1 zuchinni, roughly chopped
  • 1/2 Broccoli Head, Roughly chopped
  • 100 grams sour cream
  • 4 eggs
  • 2 tablespoons olive oil
  • 1 teaspoon mixed herbs, dried
  • 1 teaspoon paprika
  • 1 teaspoon baking soda/bicarb
  • juice of 1/2 lemon
  • salt and peper to taste

Whipped Avocado

  • 1 Avocado (ripe)
  • 2 heaped tablespoon sour cream, (optional)

Recipe's preparation

    Method
  1. 1. Mill buckwheat 1min speed 9. Set aside.


    2. Grate Parmesan 10sec speed 9. Add to reserved buckwheat.


    3. Add veggies to the bowl and chop 10sec speed 5 or until diced to your liking.


    4. Place all ingredients into the mixing bowl including reserved flour and cheese. Mix reversecounter-clockwise operation speed 2 or until combined.


    5. Spoon ingredients into greased muffin tin, about 3/4 full. Bang on bench to release any air bubbles.


    6. Bake in preheated oven at 180oC for 15mins.


    7. Cool in tin for 5mins before taking out. Serve warm with whipped avocado (1 ripe avocado and 2 tbs sour cream (optional), mix 10sec speed 3, or until preferred consistency).

Tip

For a dairy free alternative use 1 ripe avocado instead of sour cream and omit the parmesan cheese.

If you are feeling indulgent use 2 tbs of sourcream when whipping avocado.

    Hi, would these be suitable to freeze? I want to make them for my kids lunchboxes. Also, could you swap sour cream for Natural Greek yoghurt?
