Really enjoyed these. I didn't have spring onions so added half a brown onion and chopped and cooked it with the bacon. I also added corn and sundried tomatoes. The mix made 15 good sized muffins.

  • I made these for school lunch

    Submitted by Cattywompuss on 25. January 2016 - 10:25.

I made these for school lunch boxes and the kids loved them, thanks.  I use 150g of colby cheese and 30g of parmesan. I also added 100g of frozen corn to the bacon after cooking, which helped cool down the mixture before adding the rest of the ingredients so that the baking powder wasn't activated too early.  However, I found the recipe difficult to follow, almost left out the eggs and did leave out the cheese. I had to scrape the mixture out of the muffin pan and remix to add the cheese, which I found it sitting on the bench just after putting them in the oven.  So I may create a varaint with my ingredient changes and write out the recipe in more detail to protect me from myself.

    Submitted by Ellaleah on 25. April 2015 - 17:06.

This are a great snack, breakfast or lunch.  I didn't have the cayenne but they were still good.  I baked them and put them in the freezer and just microwave them when needed.  I will definitely make them very regularly, but will also explored including the corn and carrot etc.  Thanks!1

  • These are great! So light in

    Submitted by MM on 1. August 2014 - 13:42.

These are great! So light in texture - I thought they'd be heavy. The cayenne pepper gives a nice little bite! I thought it was strange to cook the bacon and not the onion (oh, I didn't have shallots so used a half brown onion), but it worked well. I made mini muffins, which are quite big enough. Love them.

  • I found 150g cheese and 150g

    Submitted by kaffeen on 8. June 2011 - 13:12.

I found 150g cheese and 150g bacon wasn't enough. The muffins were too bland for my usually vanilla-bland kids.

I'll try it again ('coz it's so quick and easy) with a stronger cheese.
