Cheese Scones

  • 120 g cheddar or tasty cheese, cubed
  • 80 g Butter
  • 1/2 teaspoon dry mustard
  • pinch cayenne pepper
  • 440 g self raising flour
  • 1 teaspoon salt
  • 60 g Butter, Extra
  • 80 g cheddar or tasty cheese, cubed, Extra
  • 380 g buttermilk

Recipe's preparation

    Cheese Scones
  1. Preheat oven to 220C.  Line a baking tray with non stick baking paper.

  2. Place cheese in TM bowl and grate for 6 seconds on speed 8. Add butter, mustard and cayenne pepper, mix for 6 seconds on speed 6, or until combined.  Set aside.  No need to wash the bowl.

  3. Place flour, salt, extra butter and extra cheese into TM bowl and mix for approx. 8 seconds on speed 8, or until mixture resembles breadcrumbs.

  4. Add buttermilk, and mix for approx. 8 seconds on speed 5, until dough almost comes together.

  5. Set dial to closed lid position and mix for 20 seconds on Interval speed to form a soft and sticky dough.  Place on a lightly floured surface and press out to 2.5cm thick. Dip a 5cm cutter into flour, to prevent dough sticking.  Cut out scones, and place so just touching on prepared baking tray.

  6. Spoon 1 teaspoon of reserved cheese mixture onto the top of each scone. Bake for 16-20 minutes, or until golden and hollow when tapped on top.

  7. Serve warm.

    Cheese scones...the best ever. The topping is a brilliant idea but the quantity is too much.

    I have been married for more than 40 y and can honestly say these are the best scones ever!
    I did not have buttermilk, so used milk and leftover sourcream instead.The mixtuewas a bit wet, so I wll use less milk next time.

    Instead of a scone cutter, I made tennisball sized balls and lightly flattened them.
    One batch yielded 9

    Loved these scones! I added the topping mixture straight in to the flour with the extra butter and cheese. Also used 2 teaspoons lemon juice with milk for buttermilk. Made more than 15 scones so cooked for only 15 minutes.

    Very tasy and light. Was a little confusedby the method, wasnt sure when to add the initial cheese and butter back in. I used wholemeal flower so would probably add a little more cheese in future.

    Oh my goodness!!!! These are amazing!! They just came out of the oven. So fluffy and the outside is beautifully crisp! The topping was amazing!! I didn't have mustard powder so I used onion powder instead and they were delicious. I also don't buy buttermilk as I just add lemon to milk as a substitute. I will definitely make them again! Best scones I have ever tasted!! Thank you!

    WOW! I made these today and they were the most moist, fluffiest scones I've ever made. I added bacon to the topping mixture and I think next time i will halve the topping mixture too as I quite a bit leftover, might make another batch tomorrow to use it up. Huge hit with the family warm from oven and even later cold. Thankyou for sharing!

    Added cayenne to the main mix, and after reading comments only made half the topping which was plenty. Tasty indeed. I also just dollope the mixture on the lined baking tray as the dough was a bit sticky, but not a problem. Thanks for sharing.

    Very yummy!  But I didn't add the butter to the topping mix (trying to be healthy-ish) and it was great, I think adding butter to the topping would be too much for me. I also used skim milk instead of buttermilk to help with the healthy and it worked fine.

    We loved these! I found there was a lot of the topping as well, but as mine was more of a spread than something to sprinkle, I topped the scones with it then used the extra as cheese butter once they came out of the oven. Very nice - I might add some herbs from the garden sometimes.

    These scones very yummy - very cheesy and buttery! I didn't end up using all the topping.. and it was more 'squeezing flat the cheese and butter topping and placing on top of the scones, rather than 'sprinkling'... but it ended up being yummy all the same. Might try to put some semi dried tomato in it or bacon next time!

    Oh my goodness!!! I made these scones with the buttermilk left over from making the everday cookbook herb butter. Scones turned out green (from the herbs) but oh so amazing, I only put the cheese topping on 50% of the scones (to make them a little healthier for my daughter) - both were unbelievably tasty with a hint of garlicky, herby goodness!!!!

    Loved them, I added a clove of garlic to the main part of the scone, skipped the spices in the topping (kids don't like any spice).  The topping was very pasty, I expected it to be drier.  My 9 month old loves them, I'll do them again with some zucchini in for her tmrc_emoticons.;)
