Cheesy Bacon Cob Loaf

  • 3 Spring onions quartered
  • 4 Rashers bacon quartered
  • olive oil
  • 250 grams Philly cheese
  • 300 grams sour cream

Recipe's preparation

    Cob
  1. Make a cob loaf using the Basic bread recipe from our EDC using 500g bakers flour.

    Cut top off cob and remove bread from inside in large pieces if possible.

    Arrange cob, lid and pieces on an oven tray and bake at 180c until browned all over.

     

  2. Chop cheese for 5 seconds on speed 6 then set aside

    Chop spring onions for 3 seconds on speed 6 set aside with cheese

    Chop bacon for 3 seconds on speed 6, add olive oil and cook for 8 minutes 100c speed 1 Counter-clockwise operation with MC off

    Add philly cheese, sour cream, cheese and spring onions and combine for 15 seconds on speed 3 Counter-clockwise operation

    Fill cob with mixture, wrap in alfoil and cook for 1 hour at 180c

Tip

Tackle recipe with gay abandon and tweak to your hearts content.

Hopefully your cob will be bigger than mine and mixture won't spill over (although it was the look i wanted) lol

Finely slice some green from the spring onion to garnish

If you need more bread to dip with use up bread rolls in freezer.

Handy to have a packet of rice crackers to serve also

    Made this delicious dip tonight... Added tin of cream corn ,some garlic, pepper! I gave the bread a small spray with cooking spray to crisp the bread up!! Went down A treat with Miss 4, Master 1 and hubby..  xx

    Who doesn't love a cob loaf. I didn't read the recipe properly (didn't set anything aside...oops) so had it all in the bowl when cooking bacon :O (I wouldn't recommend doing this as the cheese will burn and stick to the base of the bowl). I realised after it was already started so I didn't cook for as long. I added a mixture of fresh herbs and it turned out great. Oh and I scrubbed the burnt cheese off the bottom as soon as I took the mixture out - disaster averted.
