Chicken Boats for lunch boxes

Dough

  • 280 grams water
  • 2 sachets dried yeast (14g)
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 tablespoon olive oil
  • 150 grams Plain Wholemeal Flour
  • 350 grams Plain White Flour

Filling

  • 160 grams zucchini, roughly chopped
  • 80 grams carrot, roughly chopped
  • 1/2 brown onion, halved again
  • 2 cloves garlic, peeled
  • 2 cm piece fresh ginger, peeled
  • 30 grams olive oil
  • 500 grams Minced chicken or chicken breast
  • 160 grams tomato sauce
  • 40 grams brown sugar
  • 50 grams honey
  • 50 grams Cider Vinegar
  • 1/2 tablespoon Worchestershire sauce
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground paprika
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 150 grams Mozzarella Cheese, grated

Recipe's preparation

    Dough
  1. Put water, yeast, salt, sugar and olive oil in the thermomix bowl warm to 37o C for 2 minutes, speed 1. 

  2. Add wholemeal flour and white flour. Mix for 8 seconds, speed 6, and then knead for 1.5 minutes, closed lid position, interval speed.

     
  3. Pour dough onto a lightly floured surface and knead into a ball.  Wrap up (ie with thermomat) and put it in a warm place for 30 minutes.

  5. Preheat oven to 200 degrees C

    Place zucchini, carrot, onion, garlic and ginger in thermomix bowl and chop for 4 seconds on speed 5.  Scrape down sides with spatula.  Add olive oil and sauté for 5 minutes, Varoma, speed 1. 

  6. If using chicken breast, add diced chicken to thermomix bowl and Turbo pulse (closed lid position) 4 or 5 times to mince the chicken.  Scrape down the sides of bowl. OR If using chicken mince, chop the veggies (already in the bowl) for a further 4 seconds, speed 5, then add the chicken mince.

    COOK for 6 minutes, Varoma, Reverse speed 2.

  7. Add tomato sauce, brown sugar, honey, cider vinegar, Worchestershire sauce, cumin, paprika, mustard, salt and pepper.  Cook at 90 degrees C for 15 minutes, Reverse speed 2, with the MC tilted to reduce the liquid slightly.

     
  8. Assembly
  9. Line a few backing trays with baking paper (amount depends on size of boats and amount you are cooking).  

    Once dough has risen, push it back down and knead it back into a ball. For each lunchbox-sized boat, pull a small handful of dough off (about 4cm diameter) and roll them on a floured surface to form a 15-16cm diameter circle 2-3 mm thick.  This makes about 18 boats. place onto a lined baking tray.  

  10. Put about 2 desert spoons worth of chicken mixture into the centre. Cover with grated mozzarella and close the boat by pinching opposite sides to form the “points” or ends of the boat and pulling the other sides together and pinching to secure. You can make them open boats like an open “pide” or closed like a pasty (see main picture). Maybe ask your kids to help make different boats 

  11. Whisk the egg with a fork and brush some onto each boat.  Cook for about 12 minutes in the preheated oven, or until slightly golden.  Decorate with little flags (made from a toothpick and paper) for littlies and enjoy!

Tip

Put these boats in a cooler lunch bag or lunch box with a frozen drink to keep them cool until eaten.

 

You can also make these boats larger for picnics or main meals (and sprinkle with sesame seeds before cooking for a little extra something).

    lovely flavours              But the mixture is very wet. I left the mc off while cooking. Hard to make boats with such a wet mix.

    What a great idea Kellie, well done! Will pass this on to my daughter for her children's lunches... They refuse to take a sandwich so this will be perfect.  tmrc_emoticons.) fillings could be changed up to keep it interesting.
