Chicken, Cheese and Vegetable Nuggets

  • 20 g olive oil
  • 1 onion
  • 1 garlic clove
  • 2 Chicken breasts
  • 200 g Tasty cheese
  • 1 carrot
  • 1 zucchini
  • 4 mushrooms
  • 2 eggs
  • 100 g bread crumbs
  • 2 tbsp KFC seasoning, (see notes for link to recipe, this is not essential however)
  • 100 g bread crumbs, For coating nuggets

      TM 5
      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Spray 2 flat Oven trays with oil. Turn on Oven to 200 Degrees.


    Place Cheese, Carrot, Zucchini, Mushrooms and chop for 10 seconds, Speed 5. (Chop for a couple more seconds if you wish to make the veg smaller and less noticeable to the little ones!)

    Set aside in a bowl.


    Place Onion, Garlic and oil into Thermo bowl and chop on Speed 7, 3 Seconds.

    Sautee for 2 Mins/120 degrees/Speed 2. Tip out onto to the chopped Vegetables that you have already set aside.


    Leave bowl to cool slightly then add chicken pices and Turbo for 3 seconds or untill an eaven consistancy.


    Add all remaining ingredients (onion, garlic, vegetables, eggs and breadcrumbs) back into the bowl with the chicken and season to taste, Mix for 20 seconds on speed 3.


    In a small bowl mix 100g of bread crumbs with 2 tablespoons of KFC seasoning.


    With a icecream scoop (or a soup spoon) scoop nugget sized portions straight into a bowl of bread crumbs, coat and shape into desired shape, then place onto prepared trays. Spray a little oil over each nugget. (I used coconut oil but any is fine)


    Bake for 20 minuets, turning over half way through.

I use a stanless steel Ice Cream Scoop sprayed with oil to scoop the mixure as i find it a lot less messy and quicker.

 

For a gluten free option, omit the bread crumbs and crumb in GF corn flakes.

    Yummo! Made these tonight and my kids loved them! I didn't have zucchini or breadcrumbs so i swapped for baby spinach and used quinoa flakes for the mixture and GF cornflake crumbs for the crumbing. Gluten free and delicious! Will definitely be making these again!

    So easy to make and both my kids love them! We aren't huge onion and garlic fans so left those out. I didn't have any zucchini or mushrooms but added in some broccoli. I also used rice crumbs for the filling and panKo crumbs for the coating.

    Hi, I have a TM31 & use TM5 recipes. In my experience the main thing you have to be aware of is the volume, the TM31 has a 2 litre capacity while the TM5 has a 2.2 litre capacity. The TM5 also has extra temperature settings, where you see 115 or 120 degrees in a TM5 recipe use Varoma in the TM31. This looks like a great recipe that I'd also like to try in my TM31, the KFC coating is fab! Happy Thermomixing & all the best!

    Love this recipe. I don't add mushroom as we don't eat them. i added a Moroccan spice to the bread crumbs instead of the kfc seasoning, it adds a nice flavour. I also grilled them rather than oven baked as the grill gives them a nice crunch without having to pan fry With oil. My almost 3yo said "mum you da best cook at making chickey nuggeys" lol thanks for sharing

    Awesome recipe!! I'm shocked my 2 fussy toddlers didn't even hesitate in eating them and that is after they'd been eating all day long too! Easy to follow, great consistency and excellent way to sneak in veges. I pan fried mine and froze the uncooked ones for easy meals on other nights.

    Will definately be a firm favourite in this house!

    Great chicken nuggets! My 2 year old helped and both her and her older sister (4) loved them. A great way to add in sneaky veggies and the cheese added a lovely rich flavour.  I did half in the oven while the other half were frying. Although not as healthy, I prefer the crunch they got from the pan! I used popcorn chicken spice I made earlier this week but will try the KFC seasoning next time.

    Delicious!! I cooked some in the oven and in the fry pan! Fry pan are good!! It makes alot so I put the remaining uncooked nuggets in the freezer.. I only had the popcorn chicken spice (from recipe community) in the pantry so used that - think it's very similar anyway. Thanks

    Delicious!  I used spring onion instead of brown, and a small stick of celery as I had no mushrooms. Lightly fried them in rice bran oil before 10 mins in the oven just to get a really crisp exterior to them. The KFC flour coating with the breadcrumbs is genius! tmrc_emoticons.)

    This is a really yummy recipe!  I didn't use KFC seasoning, instead used a chicken coating (Tandaco brand) and mixed that in with the breadcrumbs.  Absolutely amazing nuggets - thank you!! tmrc_emoticons.)

    i made these tonight and they were  really good! I made 2 batches - the first I put straight in the oven and they were good but not over crispy - I don't think I sprayed on enough oil. The second batch I lightly fried in the fry pan and they were perfect. I have 1 question - when do you add the 2 eggs that you have listed? I didn't add any because I didn't realise until the end. My mixture was 'wet' enough to coat with the crumbs really well so I didn't use it for the breadcrumb part. Do you put them into the chicken mix? Thanks!
