Easy Beef Empanadas

Pastry

  • 5 sheets Shortcrust Pastry, Thawed.
  • 1 Egg, Lightly beaten

Optional.

  • 1 level tablespoon Brown Sugar
  • 2+ tablespoons Corn flour., Make a paste with water to add to the mince if it needs thickening.

FILLING

  • 3/4 cup tomato sauce
  • 3 tablespoons Sriracha sauce
  • 3 tablespoons vegetable oil.
  • 1 onion, Large
  • 2 cloves garlic
  • 500 grams Beef mince, Lean
  • 1 teaspoon ground cinnamon
  • 2 teaspoons ground cummin
  • 200 grams tomatoes, Finely chopped
  • 100 grams Green olives., Finely sliced
  • 3 Hard boiled eggs, Peeled and chopped

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    FILLING.
  1. Combine the sauces together in a bowl and set aside.

  2. Half the onion.Place in TM with garlic. 3secs/speed 8

  3. Add oil to TM. 4 mins/100deg/Counter-clockwise operationGentle stir setting

  4. Add beef. 6 mins/100deg/Counter-clockwise operationGentle stir setting

  5. Add Cummin, cinnamon, sugar and tomato. 6mins/100deg/Counter-clockwise operationGentle stir setting

  6. Optional. Add corn flour paste if too liquidy. 2mins/100deg/Counter-clockwise operationGentle stir setting

  7. Cool. Remove bowl. Stir in eggs and olives.

  8. CONSTRUCTION.
  9. Cut pastry sheets into 4 even squares.

  10. Spoon about a heaped tablespoon onto each sqare.

  11. Brush edges of the pastry with beaten egg.

  12. Fold one corner of pastry to the diagonally opposite corner. 

  13. Press down to seal the edges with fork or pinch with fingers.

  14. Brush top of Empanadas with beaten egg.

  15. Cook at 200C for 20 mins or until golden brown.

  16. Serve hot with remaining sauce.
