Easy Quiche

  • 100 grams cheese
  • 80 grams Self Raising Flour
  • 400 eggs
  • 315 grams Milk
  • 1 tablespoon vegetable stock
  • 1-2 zucchini gratered
  • 1 bunch broccolini
  • 1 tablespoon nutritional yeast, optional

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1.Place cheese in bowl and chop speed 5 for 10- seconds. set aside
    2. Add remaining ingredients except nutritional yeast and 1/4 of the cheese. blend reverse speed 4 for 8 seconds
    3. pour mixture in a greased quiche dish
    4. top with nutritional yeast and remaining cheese
    5. bake in fan forced oven 200 degrees for 45-50 minutes or until golden
    6. serve with side salad or avocado
    great for lunches and can be cooked in muffin trays for small lunch box servings

    Holy moly this was delicious! I'd cook it for slightly longer than 50 minutes or until the top is quite dark (but not burnt) to ensure it's not too wet in the middle. I've saved this recipe as it will become a regular in our house!

    Loved using 400 eggs!! Seriously - no one could assume that this wasn't just a "typo". Four eggs were just right.

    I did forget the veggie stock - and it still tasted great - also substituted broccolini for carrots, added 1/2 onion and used 130 grams cheese for the topping.

    Was a very tasty dish - will definitely do again.
