Gluten free zucchini slice

Ingredients

8 portion(s)

  • 120 gram cheese, cut into cubes (3 cm)
  • 150 gram carrot, (approx. 1), cut into quarters
  • 4 pieces shortcut bacon, cut into thirds
  • 400 gram zucchini, (approx. 2), cut into eighths
  • 100 gram rice flour
  • 5 eggs
  • 60 gram Grape seed oil
  • salt, to taste
  • pepper, to taste

Recipe's preparation

  1. Preheat oven to 180oC. Line a rectuangular lamington or slice tin with baking paper and set aside.

  2. Place cheese into mixing bowl and grate 3 sec/speed 8.

  3. Add carrot and chop 2 sec/speed 5.

  4. Add zucchini and bacon and chop 4 sec/speed 4. Scrape down sides of mixing bowl with spatula and repeat chopping 4 sec/speed 4 with aid of spatula.

  5. Add rice flour, eggs, oil, salt and pepper and mix 10 sec/Counter-clockwise operation/speed 4. Transfer zucchini slice mixture into prepared tin and bake for 45 minutes - 1 hour (180oC) or until light golden brown. Slice and serve warm or enjoy cold.

    This is so delicious! I made my own rice flour from brown rice i had in the cupboard. I grate the vegetables first, remove and squeeze all the moisture out. The second time i made it i only had 3 eggs so made up a chia seed egg subsitute and it turned out just as good! Winner in our house, enjoyed by everyone.

    I make these in a muffin tray as a easy alternative for the kids lunchboxes and they go down a treat. I bake them for 20-30min at 180 fan forced in a standard muffin tray
