- 20 g sundried tomato oil (or other oil)
- 100 g cream cheese
- 70 g grated cheese
- 100 g Hungarian Salami, sliced thinly
- 100 g ham, sliced thinly

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Preheat oven to 200C.
Place buttermilk, water and yeast in the bowl, heat 3 min/37C/speed1.
Add salt and baker's flour and mix 6 sec/speed 6, then knead 3 mins.
Using a thermomat or greased bowl, cover dough and place in a warm spot to prove until double in size.
Add carrot, celery. zucchini, shallot. sundried tomatoes, and oil to bowl. Blitz 10 secs/speed 5.
Srape down bowl. Cook 7 mins/ 120C/ speed 2.
Allow mixture to cool in the bowl, in the fridge for 10-15 mins. Add cream cheese and mix 30 sec/ speed 3.
Place in the fridge to cool completely
If your dough has doubled in size, you are ready to get rolling. On your thermomat or floured work bench, bash your dough out to get rid of residual air, and then use a rolling pin to roll into a rectange approx 40 cms x 30 cms.
Spread completely cooled filling on dough. Layer salami and ham over filling. Roll from the bottom of the longest side, so that you end up with a long sausage shaped dough with the filling spiralled inside.
Transfer to a surface where you can use a sharp knife (a board or bench - not your thermomat). Cut the dough into 15 pieces, about 2-3 cms thick. Place on a tray lined with baking paper about 5 cms apart.
Sprinkle with grated cheese.
Place in a warm spot for 30 mins until they have almost doubled in size again.
Bake in oven for 15-25 mins until desired colouring is reached.

Made a few changes:
Sub 200g flour for wholemeal flour
Used lemon juice and milk for buttermilk
Cut dough in half - made half with just ham, cheese and tomato paste/homemade relish and the second half with cheese and vegemite.
Cooked in preheated air fryer 180 for 9 mins on a square of baking paper, arranged in a flower shape with seals facing towards the centre scroll.

The zucchini was juicy so I drained the vegetable mix by placing a sieve over the bowl and inverting it. I initially thought the dough would be hard to work with because it seemed sticky but that was easily overcome by adding flour to the mat, top of the dough and rolling pin.

So happy I camr across this recipe! The whole family just love these! I added a bit of fresh basil and parsley to the mis too Perfect to put in the freezer and grab out for lunch boxes. I have just started using the sauce for our pizzas! I have kept one lot for tonights pizzas and put two servings in the freezer for next time!

made these as I'd just made my own butter, so had freshly made buttermilk leftover. Didn't have the sun dried tomato but substituted some tomato & chilli relish i'd made. Like others have commented dough was sticky and a bit hard to roll, but in the end it did turn out beautifully! Have frozen these individually so I can pop one out & reheat for breakfast each day. Take note of the timeframes as it does need a couple of hours to prep, etc. (PS - have now bought a thermomat - looking forward to see if it's easier to roll!)
update - made this again today, so much easier with thermomat! (Have some flour on hand for ur fingers though) And now I have the hang of things with my second bowl, so fantastic to use with meal prep for my husband. I freeze them, so he can reheat for brekkies when he's away

I add capsicum and no sun dried tomatoes. A bit of sweet chilli sauce is also nice. Salami, ham, cheese as fillings and more cheese on top.
I cut my scrolls individually from the rectangular dough. I find that easier to roll up than to roll into a big sausage and try to cut - it didn't work for me! I use a plastic pizza cutter to cut each scroll to size. It doesn't damage the thermo mat, but I also only use enough pressure to cut the dough, I don't press too hard!!

Didn't have buttermilk so improvised by mixed a couple of teaspoons of vinegar with the milk. I didn't have sundried tomatoes so threw in some tomato relish instead. Just use whatever veges you want. I also added spinach.

I made them with yoghurt, cream, milk, water instead of buttermilk and water; and the filling with cottage cheese and grated cheese as I had no cream cheese; I put a couple of chillies and some vegemite in with the filling too. I didn't put any meat in them or cheese on top. They came up beautifully, the dough was easy to handle, they cooked quickly and the teenager ripped into them very happily. Thank you for the recipe!

These were so yum. I think you could substitute just about any filling and it would work. They freeze really well too - great for school snacks, just pop in lunch box straight out of freezer and good to go by morning tea time. This one's a keeper!
