Recipe's preparation

  1. 1.  Preheat oven to 180 deg C.  Prepare your muffin tins (silicone is best as no sticking!) If you are using tin grease well.

    2.  Put onion and garlic in TMX bowl and chop for 3 seconds, speed 6.

    3.  Add mushrooms and bacon and chop on speed 5, 3 seconds. Scrape bowl down.

    5.  Add olive oil and saute for 5 minutes, 100 degrees, speed 1, REVERSE (MC OFF)

    6.  Add spinach, eggs, cottage cheese, salt and pepper and blend on reverse, speed 4 for 15 seconds.

Pour mixture into prepared moulds. Bake uncovered in oven for 1 hour, or until eggs are set.

Since the recipe is under 'high protein' I was hoping the carbs, calories, and protein were calculated per serving 🤷🏻‍♀️

  • I only had 6 eggs so I

    Submitted by digibron on 22. November 2015 - 20:04.

I only had 6 eggs so I substituted the other 2 with chia eggs, and I used 1/2 tsp Herbamare instead of 1 tsp salt. I used 1x non-stick mini muffin tin & 1x non-stick muffin tin, well greased, and didn't have any problem with the muffins sticking. They smelled great while they were cooking and my 1 year old loved them! I froze everything that was left over and I'm sure it will defrost & reheat fine (good enough for a bub, anyway).

  • Definately need to use

    Submitted by LeonieC77 on 22. May 2015 - 20:43.

Definately need to use silicone muffin pan (like recommended). I didn't have one and used a tin one, well greased, and they still all stuck and fell apart.

Also, cooked for 1hr at 180 and they were burnt on the bottom. Maybe cook for 15 mins less of lower the temp.

Family wasn't a fan of these.

    Submitted by gloriacicchini on 22. February 2014 - 15:31.

I made a vego version of these. Popped half a red capsicum & a handful of fresh basil & fresh parsley in. Also had no cottage cheese so put 100G parmesan instead. They are fantastic. Very tasty.

So delicious!  I rearely eat breakfast because I often don't have time, but with these it's easy enough to grab one out of the fridge and the protein in it keeps me satisfied for ages!  Will be making another batch today!! Thank You!!
