Kid-licious Pizza Lunchbox scrolls

Ingredients

10 portion(s)

  • 500 g White baker's flour
  • 50 g black chia seed
  • 2 tsp dried yeast
  • 40 g extra virgin olive oil
  • 1 pinch sea salt
  • 300 g lukewarm/tepid water
  • 1 jar aldi organic basil & garlic tomato sauce
  • 100 g Tasty cheese, Grated
  • 100 g parmesan

Recipe's preparation

    1. Make dough...
  1. 1.

    Make dough by placing flours, chia, yeast, olive oil, salt and water into TM bowl and mix for 6 sec / speed 6. With dial set to closed position Closed lid, knead dough for 2 minutes on interval speed Dough mode.

     

    2. Place dough in thermomat or an oiled bowl. Put dough in cold oven, turn oven to 40 degrees C and leave till dough rises to approx double in size.

     

    3. Meanwhile, place the parmesan into the TM bowl and grate for 10 sec /speed 8 and 2 line trays with baking paper. 

     

    4. Turn the dough out onto a floured surface and roll out into a large rectangular shape.

     

    5. Spread 1/2 of pasta sauce over the dough making sure it goes right to the edges - except leave 2cm clear on one of the 'long' edges (this will be the 'seal' to help stick closed easily). Sprinkle almost all of the cheese on the dough. 

     

    6. Carefully roll into a large sausage shape using the thermomix and use a serrated knife to cut into 10 x 5cm rounds. Turn filling side up and arrange in the baking dish leaving 1-2cm between.

     

    7. Put a knob of butter on top middle of each scroll, or brush with butter if you like. Sprinkle with cheese - whichever type is fine.

Tip

This is based on a delicious recipe for Wholemeal Cheesy-mite Scrolls by  PaulaM.

They freeze brilliantly and are a super easy after-school snack or for inclusion in lunchboxes.

I always, always make double so the second batch can be frozen - the first batch are gobbled up by the kids !

    I would not recommend making dough this way.....wasted all my ingredients and time, just had a big mess to clean up. Threw it all in the bin!
