Leek and Mushroom Little Puff Pies

Ingredients

Pastries

  • 4 sheets Puff pastry, feel free to make your own!
  • 30 g olive oil
  • 30 g Butter
  • 1 onion, halved
  • 3 garlic cloves
  • 1 leek, thinly sliced
  • 3 Medium mushrooms, thinly sliced
  • 1 tbsp Vegetable stock paste
  • 100 g Philly Cream Cheese
  • 100 g Parmesan cheese, grated or shaved
  • 1 egg, lightly beaten

Recipe's preparation

  1. 1. Pre heat oven to 200 deg. Take pastry sheets out of the freezer and allow to defrost.

    2. Add oil, butter, onion and garlic to TMClosed lid and chop - 3 seconds/speed 7.

    3. Add leek and mushrooms, and cook - 5 minutes/120 deg/speed 1 MC OFF.

    4. Add stock, cream cheese and parmesan cheese and mix - Counter-clockwise operation10 seconds/speed 3.

     

  2. 5. Use a round cookie cutter to cut circles out of pastry. Place 1 tbsp of mixture onto each circle.

  3. 6. Brush edge of pastry with egg and place another piece of pastry on top.

  4. 7. Seal edges with a fork and brush the top with egg. Bake for 20 minutes or until pastry is golden brown.

Tip

Experiment with other fillings such as seni-dried tomatoes, olives, feta etc.

    Very tasty- in the end I added another 300g mushrooms as I love them. Made 8 large parcels with more leftover so will pop on freezer for another days lunch thank you

    fabulous! I added bacon pieces and substituted the cream cheese for 3/4 small wheel of Camembert which I had lurking in the fridge and a tablespoon or two of ricotta.

    Tasty! Tasty! Tasty! what a beautiful way to start an evening  tmrc_emoticons.) I made two larger 15cm tarts rather than smaller portions and I still had some filling left over. Thanks Krissy x
