  • 12 slices multigrain bread-approx2-3 slices
  • 100 grams tasty cheese, 2cm cubed
  • 250 grams lean beef, cut into chunks
  • 1 small onion, halved
  • 2 rashers shortcut bacon
  • 1 medium carrots
  • clove garlic
  • 1 small bunch parsley
  • 30 grams olive oil
  • 1 egg
  • 50 grams Barbecue Sauce
  • 6 cherry tomatoes

Recipe's preparation

    Meatloaf cups
  1. Preheat oven to 180 degrees c.  Lightly grease 12 muffin pan

    Cut off crusts from bread and reserve

    Using a rolling pin flatten each slice of bread and use to line muffin tin. 

    Lightly spray with oil and bake for 5 minutes or until firm to touch

    Place crusts from bread in TM  Bowl and chop for 10 seconds on speed 8.  Set aside

    Grate cheese for 10 seconds on speed 8.  Set aside

    Mince beef by placing in closed lid position and turbo 3-4 times.  Set aside

    Chop garlic, carrot, onion, bacon and parsley for 5 seconds on speed 6

    Add oil and cook for 5 minutes, 100 degrees, speed 1

    Add reserved beef, barbecue sauce, egg, 50g of the reserved breadcrumbs (freeze the rest for later use)

    Mix 20 seconds, reverse, speed 3 with the aid of the spatula.

    Divide the mixture between the bread cases

    Sprinkle with cheese and press half a tomato onto each, cut side up

    Cook for 20-25 minutes until cooked through.

Tip

These can be served hot or cold and are a great lunch box alternative.  My kids are not keen on sandwiches so I am always trying to think of what I can give them if there are no left overs.  They love burgers so when I saw this recipe I thought it was just like a burger mixture but then cooked in a slice of bread
