MINCE AND ONION PIE FILLING - ADAPTED FROM JAMIE OLIVER'S "SAVE WITH JAMIE"

Pie filling

  • 3 red onions, peeled and quartered
  • 3 garlic cloves, peeled
  • 20 grams oil
  • 2 heaped teaspoons Fresh or dried thyme
  • 500 grams Beef mince
  • 20 grams mustard
  • 40 grams Worcestershire sauce
  • 50 grams tomato paste
  • 30 grams balsamic vinegar
  • 1 teaspoon ground cumin
  • 40 grams plain flour
  • 2 teaspoons beef stock powder, OR 2 tbsp veg stock paste
  • 200 grams water
  • salt and pepper to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place onions and garlic in TM bowl and chop 3 seconds, speed 7.

     

    Add oil and thyme to bowl and sauté for 10 minutes, 100 degrees, speed 1, MC OFF..

     

    Add remaining ingredients and cook for 30 minutes, 100 degrees, reverse spoon speed (slowest speed) MC OFF. Place simmer basket on top of lid to prevent splatter. With a few minutes to go, check the mixture and if the mince is still quite clumpy turn the speed up to 1 for the last 3 minutes cooking time.  

     

    Allow the pie filling to cool completely. Once cooled, add your choice of topping - either pastry or potato and bake in the oven for 30-40 minutes.

     

    This flavoursome mince pie filling can be used for a family size pie, party pies or shepherds pie. I made a shepherds pie using a double batch of my no fail mashed potatoes for the topping. The recipe can be found here;

    This recipe was inspired by Jamie Oliver's mince and onion pie from his book "Save With Jamie" with a few slight adaptions to his original recipe.

    Lovely flavour. I wouldn't use the flour again or if it did I would mix with water first as I had flour clumps.

    This recipe was really nice, has a proper meat pie consistency. The flavour is very close, maybe I will leave the cumin out next time (I used half the amount). I also used half the balsamic and added vegetable stock paste. I'll add bacon and maybe a bit of cheese next time tmrc_emoticons.)

    Nice consistency for a meat pie. I used 2 red onions as they were large and added a carrot and broccoli for some veges. I’ll only use one large red onion next time. I found that there was way too much vinegar, so much that next time I’ll leave it out altogether. I also think that I’ll either add or substitute a gravy base for the flour. Otherwise, it makes a cost effective pie, but as is, it has too much onion and vinegar.

    Very tasty will definitely make again but I would stir it half way through cooking as I had a clump of flour in the meat at the end ( despite doing the last 3 minutes on speed 1 not on reverse).

    Hubby is wanting pies, so I'm making this recipe this afternoon as I have a heap of beef mince to use up. We are heading off to do the groeceries shortly with a stop into Kmart to purchase a pie maker (hubby thinks a pie maker is a great investment lol). Think I'll be popular tonight going by the other reviews!

    Tastes great and easy too:First time I'm making Shepards' pie so not sure how juicy or runny it should be. Mine looked a bit too watery so I added several tbs of whole oats for the last 10-15 of cooking and it came out with great texture and can't even tell they are in there. More fiber and well hidden!

    OMG this was delicious, I only made half quantity, then put it into puff pastry in the toasted sandwich maker then into the oven at 160c for about 15 minutes. This is a keeper. Thank you.

    Just made this!! Had to make a few changes due to pantry constraints....used oregano and basil instead of thyme. Also used half hot english mustard and half mustard powder. Like another i substituted worcestershire with BBQ and decreased the balsamic. I used half water and half red wine. Further to that I added mushrooms and some finely chopped kidneys!! SMELT AMAZING cooking.....tastes even better! THANK YOU! tmrc_emoticons.)

    It's wet mustard, just a tablespoon (20g). Can't think of what would make it bitter? Could it have been one of the other ingredients that was maybe off??

    Made this last night as a Shepherds Pie - It was a lovely conistency.   Next time I will halve the Balsamic Vinegar as the taste was quite overpowering for the kids.   Might add some Mushrooms and make mini meat pies.   Thanks for a great recipe! Cooking 4

    I made this and it was perfect! a hit with kids and adults alike. I subbed the worchestershire for BBQ sauce because thats what I had. Cooked it as a pie with your No Fail Mashed Potato, it even made enough for two mini pies that went into the freezer.
