No Carb Cloud Bread

Ingredients

  • 3 tablespoons cream cheese
  • 4 egg whites
  • 2 egg yolks
  • .5 teaspoon baking powder

Recipe's preparation

  1. Turn oven on to 170 degrees celcius with trays covered in baking paper inside oven.

    Add egg whites and baking powder into Thermi - beat on speed 3.5, for 1-2 mins or until stiff peaks form. Put aside in a separate bowl.

    Add cream cheese (room temperature works best), pinch of salt and egg yolks into bowl. Whisk on speed 3.5 for 1min or until mixture is combined.

    Stir egg yolk mixture into egg whites. Be careful not to overmix. Stir till combined.

    Spoon mixture onto trays, flatten with back of spoon to the shape of 'rounds'

    Bake in oven for 15-20mins.  Remove when golden.

    Cool then put in a plastic bag.

    For a sweet version, add 2-3 tsp of sweetner (honey or stevia)

    I made these with cottage cheese instead. I also used cream of tartare instead of baking powder as I saw it recommended in a different recipe. I also added chopped dried chives & oregano to enhance the flavour. I possibly put too much salt in as they were extra salty, but my son (who’s on a paleo diet) doesn’t mind them tmrc_emoticons.)

    OMG, These are amazing. Just made a Bacon, Egg and Cheese roll. Even my 9 year old loves them. I added rosemary to the top before baking
