Ingredients

Parmesan, Polenta, chive & garlic Madeleines

  • 55 grams Instand Polenta, or normal polenta blitzed to a finer grind
  • 40 grams plain flour
  • 1/4 level teaspoons baking soda, Bi Carbonate of soda
  • 40 grams parmesan, finely grated
  • Salt & Pepper
  • 30 grams olive oil
  • 1 egg
  • 80 grams buttermilk
  • 2 heaped tablespoons Chopped chives
  • 1 garlic clove, crushed

Recipe's preparation

    pre heat oven to 180 degrees Celsius and grease and lighly flour your madeleine tray
  1. Place polenta, flour, Baking soda, Parmesan, garlic, chives and salt & pepper into bowl and mix on speed 4 for 10 seconds to incorporate.
  2. Add olive oil, egg and buttermilk to bowl and mix for 10 seconds, speed 5. Scape down and repeat mix if necessary.
  3. Add about a tablespoon of mix to each Madeleine mold filling to 3/4. Bake for 8-10 minutes and then cool on a wire rack.
  4. Eat warm with soup or split and fill with a creamy savoury filling. These can be frozen.
