  • 750 grams butternut pumpkin
  • 140 grams olive oil
  • 1/2 teaspoon ground nutmeg
  • 300 grams brown onion
  • 2 cloves garlic
  • 100 grams Spinach Leaves
  • 6 eggs
  • 75 grams Self Raising Flour
  • 120 grams grated cheese

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Roast pumpkin
  1. Preheat oven to 200 degrees or 180 degrees fan forced.

    Cut pumpkin into cubes.

     

    Toss pumpkin with 2 T of the oil, nutmeg, salt & pepper and put in an oven tray and roast for about 30 minutes.

  3. Place onion and garlic and chop for 3 seconds spd 7.

     

    Add 2 T of the oil with the onion and garlic into the TM and saute for 3 minutes varoma spd 1.

     

    Tip into a seperate bowl and add the spinach stirring them through. 

     

    Add the eggs to the TM bowl, add remaining oil, flour, grated cheese and salt & pepper and mix for 5 seconds spd 3.

     

    Reduce oven to 180 degrees (160 degrees fan forced).

     

    Add the pumpkin to the onion/spinach mixture and place in an oven dish. Drizzle with the egg mixture and top with the ricotta.

     

    Bake for 45 minutes.

Tip

Make it GF by using GF flour and adding 3/4 of a teaspoon of baking powder to the 75g of flour.

    I made it with sweet potato and because I was a little short in weight I added 3 smallish potato's.
    We like garlic so I added 5 cloves.
    I added fresh english spinich.
    My family loved it, we buy something similar from aldi and the family said mine was better.
    Will be on rotation in our house, freezes well and can be eaten hot or cold. thank you
