Spinach and Fetta Muffins
- 300 grams Self Raising Flour
- 250 grams Milk
- 100 grams olive oil
- 2 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 150 grams Fetta Cheese, cubed
- 2-3 portions English spinach leaves

Recipe's preparation
Prepare a 12 tin muffin pan with patty pans.
Place the flour, milk, oil, eggs, salt and pepper in the Thermomix bowl and combine on speed 4 for approximately 20 seconds.
Add the cheese and spinach and fold through on reverse, speed 2 for approximately 20 seconds using the spatula to assist.
Spoon mixture into the patty pans and bake in a pre-heated moderate oven for approximately 20 minutes or until muffins spring back.
Serve warm (or cold!).

Just made these reducing the oil to 50g, adding 1 tbsp vege stock concentrate, 50g sundried tomatoes, omitted the spinach - stuffing my face now yummy!

I adjusted this recipe to use
I adjusted this recipe to use up the whole packet of feta and I also reduced the amount of oil. 400g self raising flour, 330g milk, 65g olive oil, 3 eggs, 1tbs veg stock concentrate, 1/2tsp cracked pepper, 200g feta cubed, 3 handfuls of baby spinach roughly chopped. I also added on this occasion 100g sun dried tomato and used some of the flavoured oil they were sitting in to make up the oil quantity mentioned above. YUMMO!
I don't like the EDC muffin
I don't like the EDC muffin recipe, but this is great! So fluffy and light, just beautiful. I didn't put spinach in them this first time I made them, I really wanted to try semi-dried tomatoes in my fetta muffins and they are delicious

Love these and have got my family making them as well. Like the tip about adding some Veg Stock Concentrate. Lovely warm for breakfast. Best to oil the muffin tin as the mixture really sticks to the paper cases.
I made these with 50g less
I made these with 50g less oil and an extra egg. Used 1 tblspn of Vegetable Stock Concentrate instead of the salt and pepper. Also, had no Fetta so I used cottage cheese. Tastes great. Thanks Di
