Vegetarian (Hidden-Veg) Sausage Rolls

Ingredients

Sausage Rolls

  • 1 onion, quartered
  • 1 carrot, roughly chopped
  • 1 bunch Spinach Leaves
  • 200 grams cottage cheese
  • 30 grams bread crumbs
  • 100 grams oats
  • 50 grams walnuts
  • 3 eggs
  • 10 grams soy sauce
  • 4 sheets Puff pastry

Basting

  • Milk

Recipe's preparation

    Preparation
  1. 1. Preheat oven to 180 degrees.

    2. Place all ingredients (except eggs, soy sauce and pastry) into TM mixing bowl and chop speed 7/10 seconds. Scrape down sides and repeat until a smooth consistency is achieved.

    3. Add eggs and soy sauce and mix speed 4/5 seconds until combined.

    4. Cut each pastry sheet into 4 pieces. Spoon 1/4 of mixture onto long edge of each pastry sheet and baste edges with milk before rolling closed. Cut each roll into 4 equal portions and place onto a baking tray.

    5. Score the top of each sausage roll with a knife and baste with extra milk.

    6. Bake for 15-20 minutes or until golden brown.

Tip

Substitue walnuts for pecans or almonds (whatever you have really). If nut free - substitute pumpkin and sunflower seeds.

This is a great way to smuggle vegies into your children's diet. They make a great snack. Perfect for birthday parties too!

I use fresh breadcrumbs (from all of the crusts my kids don't eat) but you can use store bought if you prefer

    Perfect for fussy eaters!

    I found the mixture to be very runny, however they still cooked well. They are a little bland for my liking - next time I will add some mixed herbs. Also - I only had enough mixture for 3 x puff pastry sheets!

    I would make again - just do some suggested tweeks from comments below!

    This is a favourite with my fussy 2 and 3 year olds. Sometimes I use kale or silver beet in place of spinach and add a teaspoon of tumeric for good health. So delicious thank you!

    Lovely! Added zucchini, mushrooms and tmx veg stock. Didnt have cottage cheese so used ricotta kids didnt work out how many veges were in it.
