Veggie Smuggling Savoury Muffins (Adapted from bakeplaysmile.com)

Ingredients

  • 150 grams Tasty cheese, Roughly chopped
  • 1 zucchini, Roughly chopped
  • 1 carrot, Roughly chopped
  • 1/2 red capsicum
  • 125 grams Corn, Canned (no added salt) or frozen
  • 300 grams Self Raising Flour
  • 180 grams Milk
  • 1 egg
  • 50 grams fruit chutney

Recipe's preparation

  1. Preheat oven to 200C.

     

    Grease a 12 hole muffin pan or use paper cases. Grease a mini muffin pan for any excess mixture.

     

    Add cheese, zucchini, carrot, and capsicum to TM bowl and grate 6 seconds, speed 5, or until grated but not mush.

     

    Add corn and flour and mix on Counter-clockwise operation speed 3-4 for 20 seconds or until combined.

     

    Combine milk, egg and chutney in a bowl, pour into TM bowl and mix on Counter-clockwise operation speed 3-4 for 20 seconds or until just combined.

     

    Spoon mixture into muffin holes.

     

    Bake 15-20 mins or until a skewer comes out clean (shorten the time for mini muffins to approx 10 mins).

     

    Stand in muffin pan for 5 mins before turning out on wire rack to cool.

Tip

Great for freezing for kids lunch boxes. My 18 month old loves these for childcare. Defrost in the fridge overnight, or 15-20 sec in the microwave.

Use whatever vegetables you have - onion and tomato (seeds removed) work well.

Add ham or bacon for extra flavour.

    Great! I topped w grated cheese and a 1/2 cherry tomato. I also added 1 tbsp ea of wheat germ and chia seeds. This recipe is similar to Louise Fulton Keats' Cheesy Vegetable Muffins from TMX baby and toddler cook book. Great as breakfast muffins. Next time I might add chives/shallots. Thx for sharing.
