Zucchini and Four Cheese Slice

  • 100 grams Tasty cheese, cubed
  • 100 grams Parmesan cheese, cubed
  • 50 grams Fetta Cheese, cubed
  • 50 grams mozzarella, cubed
  • 400 grams zucchini, roughly chopped
  • 1/2 bunch parsley, fresh
  • 1 onion, peeled & halved
  • 100 grams Self Raising Flour
  • 4 large eggs
  • 1/2 teaspoon pepper, freshly ground

Recipe's preparation

    Zucchini & Four Cheese Slice
  1. Pre-heat oven to 180 degrees. Line a slice tray or bread tin with greaseproof paper and set aside.

  2. Place 4 cheeses in TM and grate on Speed 7 for 4 -5 seconds. Set aside.

  3. Add Zucchini to TM and chop on Speed 5 for 2-3 seconds. Set aside with cheeses.

  4. Chop parsley & onion on Speed 7 for 1-2 seconds. Leave in TM.

  5. Dough mode Add Zucchini and Cheeses back to TM Bowl with all remaining ingredients. Set to closed lid position. Combine on Kneading function for 30seconds with the use of spatula to help.

  6. Pour mixture into tray/tin and bake at 180 degrees for 35 - 40mins. Slice should be firm to touch and lightly browned.

    This was really nice. I didn't have any parmesan so i used extra mozzarella and feta, i also added a half capsicum, spring onion and celery to up make for bot having 400g zucchini. tmrc_emoticons.D

    Love this, I combine step 3 and 4 (speed 7, 2-3 secs) and step 5 I find 30 secs speed 4 works really well.

    I am not sure I made this correctly. It seemed to be very moist and collapsed after I took it out of the oven. Some direction in the size of the loaf pan recommended would be useful. I used a small one and I think it did not cook properly. As a result it tasted uncooked. I would recommend using a larger pan so that it is not too deep when you cook i
