Zucchini Slice

Ingredients

0 portion(s)

  • 1 onion, (roughly cut)
  • 5 bacon rashers, (or 150g ham roughly chopped)
  • 2 small zucchini, (roughly cut)
  • 6 eggs
  • 150 g cheese, (roughly cut)
  • herbs (mixed or italian)
  • Salt and pepper
  • 130 g Self Raising Flour, for gluten free omit SR flour and add 90g brown rice flour (ground rice), 30g cornflour and 2 teaspoons baking powder

Recipe's preparation

  1. Describe the preparation steps of your recipe

  2. Preheat oven to 150 degrees Celsius, fan forced.

    Place cheese in TM bowl and grate on speed 8 for 3 seconds.

    Add the onion, bacon and zucchini and chop on speed 6 for 5 seconds.

    Scrape down sides of bowl and repeat if necessary.

    Add eggs, herbs, salt and pepper, flour (or gluten free alternatives) and mix on reverse speed 5 for 10 seconds.

  3. Pour into a greased 22 x 30 cm dish and bake for 30 - 60 mins until set and browned.

  4. Beautiful served with a side salad and some home made relish or BBQ sauce.

    Great for parties, picnics and BBQ's.

    Lovely cold or hot.

Tip

Kids seem to love this slice, but for fussy eaters with an aversion to the colour green, just peel the zucchini and call it cheesy slice.

    Based on other comments I also blitzed everything but the eggs and flour at the same time and I baked it in a square springform pan lined on the bottom so I could get it out easily.

     

    Thank you for the recipe. I would have liked some cold for lunch tomorrow, but there isn't any left Big Smile

    tmrc_emoticons.) i went the lazy/cheats version too! put all ingredients except flour and eggs in and turbo blitzed, it was sooo easy. My kids always loved the old fashioned version and now it is a dream to make in the TMX. Thanks so much for your recipe.

    I've never tried it with a flour alternative. It might possibly work without it but would be more like a frittata. So perhaps you could start it on the stove top in a pan and then transfer it to the oven??

    If you leave the flour out all together it will be rather soft, the flour stabalisers it a bit. Almond meal wouldn't work well at all.  Not sure what you could use instead.

    Thanks for adding this recipe, it's a classic and is sooo much easier with the TMX!

    I find it's best to grate cheese first in a dry bowl and set it aside. I don't bother setting everything else aside, just add harder vegies first and softer last. I use carrot and capsicum (but I chop the capsicum). I also prefer to chop the bacon.

    You can use ham, too - great to use up Christmas ham!

    This was delicious! Here is how I tweaked it because I am lazy!

    - Put 1/2 onion, 1 extra large zuchinni (medium chunks), 75g low fat cheese (small chunks) and 175g bacon (large chunks) in the TM. Turbo button a few times until it got to the right size (looked a bit like fried rice). Then added the eggs and flour, reverse speed 4. Mine only took 20 mins but I think my dish was larger.

    We cant have the bacon or the cheese, so I just made it without them.  Could have done with a smidge more salt, but was delicious all the same.  All children ate it too. tmrc_emoticons.-)
