Mini Muffins

  • 150 g Self Raising Flour
  • 1 level teaspoon ground cinnamon
  • 30 g Butter
  • 45 g brown sugar
  • 1 egg
  • 1 Overripe Banana
  • 60 g Light Milk
  • 50 g dark chocolate chips

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180degrees. Grease mini muffin tin or use silicone mini muffin form.

     

  2. Add flour, cinnamon and butter to the bowl. Speed 4, 10 secs.

     

  3. Add sugar, egg, banana, milk and chocolate bits.  Reverse Counter-clockwise operation Speed 4, 10 secs.

    (You may need to scrape down the sides and blitz for a few more seconds.)

     

  4. Spoon into mini muffin tin (approx 1 desert spoon).

     

  5. Bake for for 12-14 minutes or until cooked when a scewer comes out clean.

     

  6. Serve warm, cool or freeze for handy lunch box snacks!

Tip

VARIATIONS:

SUGAR: You might like to replace the sugar with another sugar alternative or reduce the amount.

FRUIT: You can replace the banana with overripe moist/mushy fruit ie. peach, nectarine. You could do this in the bowl after step 2. Speed 6, 6 secs or until chopped finely, then proceed with rest of recipe.

Pop in 50g of blueberries, raspberries for another variation.

CHOCOLATE: You can omit the chocolate chips or use white or milk chcolate chips for another variation. 

This recipe is suitable to freeze. They'll be defrosted by morning tea time at school! 

You can DOUBLE the mixture and follow the same recipe, works a treat.

    Nice and easy to prepare.
    I used three smaller bananas in a double recipe and a combo of cacao nibs and chocolate.

    In the oven now. WIll rate after trying them.

    Love these, so super quick and a great way to use up than lonely banana languishing away in the fruit bowl. Subbed with spelt flour and 2 teaspoons of baking powder to make self raising and used blueberries in place of choc chips and they were delish! Kids loved them. Will put them on regular rotation!

    Absolutely delicious!!! To date, I've made 9 batches - & I double the amount. All 4 kids love them and as does hubby. They have become a lunch box favorite. Love the recipe!!

    I substituted milk for almond milk, sugar for natvia, butter for grape seed oil and choc chips for raisins. This was very yummy! Thank you. Oh and wholemeal flour instead of white.
