20 Seconds Yoghurt Cake - Gâteau au Yahourt with Caramelized Apple

Ingredients

12 slice(s)

Caramelized Apples

  • 4 granny smith apples, peeled,cored and quartered
  • 50g brown sugar
  • 40g Salted butter

20 Second Yoghurt Cake Batter

  • 165 g raw sugar
  • 1 lemon zest, grated
  • 1 tbsp lemon juice
  • 2 eggs
  • 180 g yoghurt, Natural or Vanilla
  • 130 g vegetable oil
  • 1 tsp vanilla essense
  • 275 g plain flour
  • 1 1/2 tsp baking powder
  • 1 tsp bicarb soda

Recipe's preparation

    Caramelized Apples (Optional, this cake is delicious Natural as well)
  1. Slice each quarter of apple into about 3 or 4 even slices.

    Put all the ingredients in the TM bowl and cook for 12 min at 110C reverse soft stir (spoon) without the MC on.

    Pour the caramelized apples into a 20cm spring form greased cake tin and spread evenly to cover the bottom.

  2. 20 Seconds Yoghurt Batter
  3. Put all the batter ingredients into the TM bowl (if you have made the caramelised apples, you dont even need to wash the bowl, extra flavour!) and blend for 20 seconds/speed 5.

    Check that the mix is well combined (scape the bowl and mix a few extra seconds if not) and pour into the prepared tin on top of the apples (if used).

    Bake at 170C for 40-45 minutes or until a skewer inserted in the middle comes out dry.

    Enjoy with vanilla ice cream, Sour cream or a dollop of creamy yoghurt.

Tip

This is such an easy and versatile cake, you can really make it whatever you want!

Adding fruit to this cake is an option, it is traditionally eaten just as is for "gouter" (afternoon tea) in France and really popular with kids. My little 6yo can indeed do it all by herself tmrc_emoticons.)

You can also be creative and seasonal when adding fruits. pineapple, pear, peach, mango, prunes, plums, raspberries, cherries are all great combination with this cake.

You may also want to substitute lemon rind/juice with Orange, and why not add some chocolate chips for a Jaffa twist.

Our Granny Smith apples were on the small side, and I was tempted to add another because of this but decided not to. I'm glad I didn't as this amount caramelised beautifully. Followed the recipe exactly (with exception of an extra 10 min in oven). Thank you for sharing

    Luuuvly Recipe. I put pineapple,dates and banana with my stewed apple. Total amount of fruit 600grm. When I put fruit in large springform tin, I sprinkled ground linseed and desiccated coconut on top to absorb the liquid. I used SR.flour and omitted baking powder. I substituted 50grm of flour with custard powder. I substituted vegetable oil for melted coconut oil. Pinch of salt. I only used 90grm sugar 😋💝

    Beautiful recipe. Notes; I use Greek Yoghurt and Omitted the lemon. I made 24 Muffins and cooked for 20 minutes (rotating at halfway) with no muffin liners, just bit of cooking spray.
    I popped a one out while still warm, scooped any apple that fell out and just piled on. (Pictured)

    A good moist cake. I gave it 4 stars as the apple was not caramelized. It was kind of soggy and you had to hold it together. The flavour was good. Maybe if you laid the apple and etc on top of the cake? Everyone enjoyed it. It made one cake in a springform pan as specified and cooked in the time.

    Great recipe and a hit with everyone who ate it! The flavours were subtle, nothing too dominant i.e the lemon or the yoghurt. The caramelised apple was lovely!! I'd probably slice the apple into wedges next time rather than chunks as I did but it didn't affect the taste. Thanks for this great recipe!

    This is the best cake recipe ever!! Love the convenience of throwing everything in. No fuss but amazing taste!!

    i added some fresh mangos in the cake tin and pourd batter on top. The mango added a nice texture to the cake.

    Glad you enjoyed it. Different oven heat in different ways and the size of your tin, consistency of the batter will influence the cooking time. You will know when the cake is ready by inserting a skewer in the middle and it comes out dry tmrc_emoticons.)

    I also had the same issue. I think if I made this again, I would drain the Fruit. The centre was quite doughy. I did also substitute the flour for gluten free, so it could have been this. A bit of thick cream on the side and it was all good!

Made these as muffins - halved recipe, used pears (it's what i had), only had olive oil instead of vegetable oil, chopped the pears into little cubes for muffin size purposes, and stirred the stewed pears into the batter at the end (by hand). Muffins rarely work out for me, and these are so good warm  Cooking 7

    This was quite nice and easy. Used pears, and the smell while caramelising them was divine. 

    I'd make again, but would definitely add some ground cinnamon/nutmeg/cloves/mixed spice to make the flavour pop a bit.

    I'm eating this cake while it is still warm and it is sensational. So soft and moist and I love the taste of lemon through it. I have made many upside down cakes and this one illustrates how easy it is using the Thermomix in that the apples are also caramelised in the TM. I used golden delicious apples from our tree, cut down the sugar in the cake to 130g and cooked it for 50 minutes. Will definitely be a favourite.  tmrc_emoticons.)

    An absolute hit. Made this on the weekend for friends but cut it in half and put fresh mango along with Vanilla Frosting and then covered the top of cake with remaining frosting.     I am so pleased with how this turned out!

    I didn't have time for caramelised fruit so I just layered some sliced pear and cinnamon sugar in the base of the cake tin with the mix on top.  Used a mix of 80g olive oil/50g coconut oil.  Needed to cook it for 47 minutes but it really is a super delicious cake.

    The batter tasted beautiful but I should have cooked it for another 10 minutes or so. Looked cooked but several minutes out of the oven it started to sink in the middle and it was uncooked in the middle when I cut it. It may have been the caramelised apple which had quite a bit of juice. Pretty sure putting fruit in the bottom means you need to cook this cake for longer. I will give it another try though.

    I used peaches, didn't remove the skin as its too fiddly, managed to accidentally put 40g extra yoghurt in, reduced sugar in cake batter by 25g, had no lemon so omitted and it still tastes lovely. Thanks for sharing a recipe that works even when the user is a bit clumsy tmrc_emoticons.;)

    This cake is delicious.  however, I found the batter was far too much for my go to cake tin Which is a round 22 cm cake tin.  Abide by the earlier suggestion and spread it over 2 smaller tins or one very large tin.

    I adore this recipe, as I was making it for the first time for a birthday I was cautious and mixed the dry ingredients first then added the wet, I had no vegetable oil so used extra virgin olive oil, I omitted the apples as I frosted the cake, I also split the batter across a 23cm and 20cm springform… It was PERFECT!! Everyone loved the cake noting it was refreshing with the lemon flavour, fluffy and light. I am going to make myself a second one today as there were no leftovers. Thank you for the beautiful recipe.

     p.s. this is my go-to frosting http://www.recipecommunity.com.au/baking-sweet-recipes/chocolate-cream-cheese-frosting/158710, for this cake I replaced the cacao with a touch of melted white chocolate and colour from raspberries.
