  • 1 level teaspoon ground cinnamon
  • 30 g Butter
  • 50 g dates
  • 45 g Coconut sugar
  • 1 egg
  • 1 Overripe Banana
  • 60 g Light Milk

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180degrees. Grease mini muffin tin or use silicone mini muffin form.

     

  2. Add flour, cinnamon and butter to the bowl. Speed 4, 10 secs.

     

  3. Add dates. Speed 6, 10 secs or until date consistency is achieved.

     

  4. Add sugar, egg, banana, milk and chocolate bits.  Reverse Counter-clockwise operation Speed 4, 10 secs. (You may need to scrape down the sides and blitz for a few more seconds.)

     

  5. Spoon into mini muffin tin or form (approx 1 desert spoon).

     

  6. Bake for for 12-14 minutes or until cooked when a scewer comes out clean.

     

  7. Serve warm, cool or freeze for handy lunch box snacks!

Tip

VARIATIONS:

SUGAR: You might like to replace the sugar with another sugar alternative or reduce the amount.

FRUIT: You can replace the banana with overripe moist/mushy fruit ie. peach, nectarine. Add this into the mix at Step 3.

This recipe is suitable to freeze. They'll be defrosted by morning tea time at school! 

You can DOUBLE the mixture and follow the same recipe, works a treat.

    Kids inhaled them! Gorgeous and moist, I was distracted and added too much milk but they still turned out amazing and were super quick, had the idea and had them served for afternoon tea within 15 minutes! Will definitely be on regular rotation in our household tmrc_emoticons.)
