30 Second Cupcakes

Ingredients

24 portion(s)

Cupcakes

  • 250g unsalted butter, cubed
  • 200g caster sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 250g self-raising flour
  • 100ml Milk
  • 2 tablespoons cocoa, OPTIONAL for chocolate cupcakes

Recipe's preparation

    Cupcakes
  1. 1. Preheat oven to 170°C.

     

    2. Line a cupcake or muffin tray with cupcake/muffin papers.

     

    3. Place all ingredients into the TM bowl and blitz on speed 6 for 30 seconds.

     

    4. Spoon mix into prepared cupcake tray, 2/3 filling each paper case (the cupcakes will rise).

     

    5. Place in oven and bake for 10-12 minutes for small cupcakes or 15-18 minutes for muffin-size cupcakes.

     

    6. Allow to cool for 5 minutes before removing from tray.

Tip

When cooled, ice with a vanilla, chocolate or fruit flavoured buttercream, which can be smoothed on with a flat knife or piped for a decorative effect.

Top with sprinkles and cachous.

    I baked at 180 for the longer time as I found mine were still soft, but every oven is different!

    So light and delicious! After baking and cooling, injected with 2 mls of raspberry coulis and dusted with icing sugar. Kids loved them and were totally happy to forego buttercream icing! So, everyone's winning at our place today! Thanks for a great recipe. My new go to for cupcakes!

    Tedsmum: I posted 2 comments down about making a rainbow cake. I made a double batch and made each layer 300g worth of batter. From memory they cooked for around 8 minutes each but depends on your oven, you'd need to touch the top of the cake to make sure it was firm to the touch and springs back a bit.

    Thanks for a great recipe. I made 2 batches, weighed them out into 300g, coloured them with Hoppers natural food colouring and made a rainbow cake.
    Used this Italian meringue buttercream

    Love these cupcakes. These are easy and delicious. However, I find 2 tsp of baking powder leave a funny mouthfeel, so I cut down to 1 tsp.

    I also found filling the cups just halfway up is enough for nicely domed cupcakes (My first batch overflowed if filling 3/4 up, as indicated)

    I followed the recipe exactly and these cupcakes were perfect. I made 24 normal size cupcakes and cooked for 15 minutes. I tested one with icing sugar dusted on top and also with chocolate icing - both were delicious!

    Nice and easy to make. I think I mixed for an extra 15 seconds. They are cooling and in the morning I will cut the centre out and fill with some lemon & passionfruit curd I made from the BCB. I will dust with icing sugar. YUM!

    Pushed one 1-2cm chunk of toblerone into the middle of each before cooking.
