60 Second Strawberry Cake

Ingredients

  • 250 g Strawberries, hulled
  • 225g Butter, room temperature
  • 200g sugar
  • 3 eggs
  • 300g Self Raising Flour
  • 2 teaspoons vanilla essence

Recipe's preparation

  1. Preheat oven to 180C. Grease and line 20cm springform cake tin.

  2. Place the strawberries into TM bowl and chop 5 sec/speed 8. Scrape the sides down and repeat. Set aside. No need to clean the bowl.

  3. Place the butter and sugar into TM bowl and chop 20 sec/speed 8.

  4. Add remaining ingredients including the set aside strawberries and combine 30 sec/Counter-clockwise operation/speed 4[/b].

  5. Pour into 20cm round cake tin and bake for 50-60 minutes[/b]. Dont overcook or it will get crunchy on the edges.

Tip

If you want pieces of strawberry showing in the cake, only chop half the strawberries in step 2. Slice the remaining strawberries and add them with the remaining ingredients in step 4 along with 100gms milk.

Nice layered with strawberries and cream and topped with natural strawberry butter frosting. Sometimes I add extra chopped strawberries at the end, and some pink colouring.

    Delicious!! Thank you for the recipe. I used aquafaba and frozen strawberries as that's all I had. Made in black silicon muffin moulds cooked for 20 mins. Was a bit crumbly, I probably used the wrong amount of aquafaba. Next time - there'll definitely be a next time - I'll try doubling the mixture. I'll also reduce the sugar a bit for lunchboxes.

    Not sticky! I would just sugar or flour up the pan really well though. But maybe try it ahead of time, just in case and then freeze it before you decorate it. Good luck, let me know how it goes!

    Lovely strawberry cake using real strawberries. I put the strawberry puree to one side and swirled about two thirds of it through the batter once it was in the tins (I split the batter into two 20cm tins). Took less time to bake.  I used the left over puree in the cream cheese frosting.

    Very versatile recipe. We made this with frozen mixed berries and it worked beautifully and turned out a nice purple.  They were a beautiful addition for my daughter's birthday party.

    I did end up adding some milk to the recipe to make it a more pourable batter, I made mini cupcakes and normal sized cupcakes and they all turned out well.

    Very yummy and moist.  I made this up as 12 cupcakes and 4 large muffins and kept an eye on them in the oven and they worked perfectly.  The strawberry flavour isn't overwhelming but really nice - even my very fruit adverse hubby really enjoyed them.  The cupcakes stored really well too.  Definately using this recipe again, next time for a layered birthday cake for a pink crazy 8 year old.
