Sadly mine turned out to be stodgy as well. My apples were pretty large so I’m thinking that may have has something to do with it. I added some cinnamon to mixture and sprinkled Demerara sugar on the top before baking to give texture to cake crust. Tasted OK but I’ve had much nicer results with other recipes. Will try again someday with smaller or fewer apples.

dondeb: I'm not positive but I'd say doubling the batter probably had something to do with how dense your cake was. Perhaps you had to mix it for longer and that affected the texture.
When I make this cake I reduce the butter and add some milk to loosen the mixture, and it comes out quite nice and fluffy. It's so quick to make that if you want 2 cakes, you could easily make 2 separate batters rather than doubling the quantity.

Very disappointed. I doubled the mix and they came out like a brick! Any ideas on what happened here would be helpful. I have a recipe called Irish Apple Cake which is very similary but you just put chunks of apple in the batter.

Just made it again. Reduced sugar to 120g, added a dash of vanilla essence and some cinnamon.
Blitzed ingredients for 20sec before adding hand-chopped mixed apples & pear with skin on, then blitzed again for 20 seconds as I like the fruit to have a bit of texture.
2 pieces didn't chop so I just pulled them out and diced them up and threw them back into tray with mixture. Delicious again!

I tried this recipe today, doubled the recipe so could cook two slice tins worth. It was so easy and lovely - everyone enjoyed it. I added a couple of teaspoons of YIAH country baked apple pie spice to the mixture and brushed the butter with vanilla sugar at the end. I will be making this again.

Wow, great recipie, so yummy - thanks for sharing with us all! I replaced one of the apples with a pear (skin on) and used pink apples (mixing at a lower speed) it was yummy. I had to bake it for an extra 10 mins than the recipe says and that made it just perfect.

You didn't follow it to the letter if you had it wouldn't have turned out dense! That's not the recipe creators fault. You can't just sub GF flour with the same quantity! GF is dense that's why yours turned out dense. You need to add more liquid if you're going to use GF flour. Google and you'll find tips on it

    Submitted by trixybacon on 12. April 2016 - 20:38.

Like some of the others, this cake turned out very dense. Followed instructions to the letter. Wondering if it's the size the apples are chopped to? Ours was completely puréed. For those that have had it turn out, did you have some apple chunks? My hubby cut the apples fair bit before they went in the bowl, wondering if the secret is to just quarter them or something?

Made this today - reduced the sugar as alot of the comments suggested to - however 100g wasn't sweet enough for us - next time am going to stick to the recipe. Also had Fuji apples - so maybe thats why... Used a slice form and it is a dense cake - but I did read in the comments it is one. Thanks for the recipe, will try it again soon!
