Almond Berry and Yoghurt Muffins

  • 120 g almonds
  • 180 g raw sugar
  • 130 g Butter
  • 2 eggs
  • 250 g natural yoghurt
  • 180 g plain flour
  • 3 teaspoons baking powder
  • 300 g Frozen Blueberries or Raspberries
  • 2 tablespoons Flaked or slithered almonds

Recipe's preparation

    Almond Berry and Yoghurt Muffins
  1. Preheat oven to 190 degrees c.  Place 18 paper cases in muffin tins

    Place almonds in bowl and mill on speed 8 for 10 seconds. Set aside

    Place sugar in bowl and mill on speed 9 for 4 seconds, Set aside with almonds

    Add butter and melt for 2 minutes at 90 degree on speed 1

    Add eggs, yoghurt, sugar, almonds, flour and baking powder and mix for 10 - 15 seconds on speed 5

    Add berries and mix for 20 seconds, reverse speed 2-3 using the spatula to help mix

    Divide batter between the paper cases. 

    Top each muffin with flaked almonds

    Bake for 20 mins

    Remove from oven and allow to cool for 5 mins before placing on a cooling rack

Tip

You can make your own yoghurt very easily using the recipe in your Every Day Cookbook.  I like this recipe in that its got lots of yoghurt and fruit in too.

    kids loved these muffins i used a little less sugar and 200 grams of blueberries and they turned out great.

    I thought these were lovely! I used 200g of fresh blueberries, 200g of natural pot set yoghurt and I didn't have any almonds so omitted those, and they still turned out great! 5 year old would have eaten them all if I let him!

    These were quite nice but I found the almonds created a strange texture. I usually love ground almonds in cakes but not so much for this recipe. Also I would add less blueberries next time as the muffins turned out quite soggy and wet. Otherwise a nice easy recipe

    Substituted the frozen berries for 250g fresh strawberries (chopped for 2 secs in thermomix after the sugar and set aside)

    These were yummy. tmrc_emoticons.) Used less sugar and almond meal instead of almonds. Funny thing though when I was tidying up the kitchen after putting them in oven I found the eggs!  Will definitely make again using the eggs!  Had made yoghurt in TM which half set and used that. Didn't sprinkle with almonds.

    Yummy. We had them for breakfast this morning as I also substituted 1/4 cup of rice malt syrup for the sugar and it tasted great.

    I just made these muffins!I made a couple of changes, instead of sugar I used 100g of rice malt syrup and I used greek yoghurt. They are delicious, thanks for a great recipe!
