Anzac Biscuits / Crunchies
- 125 grams Butter, cubed
- 2 tablespoons Boiling water, boil kettle
- 1 teaspoon Bi-carb soda
- 1 tablespoon golden syrup
- 200 grams Self Raising Flour
- 220 grams raw sugar
- 75 grams Coconut, desiccated
- 90 grams rolled oats
- pinch salt, milled

Recipe's preparation
- Preheat oven to 180c
Line 2 baking trays with baking paper
Place butter into bowl and melt 2 mins 70c speed 2
Combine 2 tblspns boiling water with 1 tspn bi carb soda and add to butter in bowl
Add 1 tblspn of golden syrup to bowl mix for 5 seconds speed 3
Add flour, sugar, coconut, rolled oats and salt to bowl combine for 20 seconds "Counter-clockwise operation" speed 3-4
Roll into balls and place on greased tray allow enough room for spreading gently press with fork to flatten slighty.
Place into oven and cook for approximately 15 minutes.

Tip
To flatten biscuits dip a fork in flour, shake off excess and press down on each biscuit, repeat with flour for every biscuit.
Or
flatten with a wet fork.
Don't overcook, they will be soft when you put them on tray to cool and will go crunchy when cold.

I accidently blitz them too much too and cooked them a bit longer but they turned out like buttersnap biscuits!!! yummo!!

These are delicious! I just turned the speed down to 3 with the dry ingredients and added a tad more boiling water at the end which just made them a bit easier to roll. Will be making these on a regular basis - kids loved them!

These biscuits were
These biscuits were delicious! Though in the recipe you haven't said when to put the golden syrup in, I'll admit I almost forgot. Even on reverese I found speed 5 too high to mix the dry ingredients and almost turned all my oats into a fine powder, I simply turned it down to speed 3 and there was no dramas.
Awesome recipe though and one I'll be saving!
