Anzac Biscuits / Crunchies
  • 200 g SR flour
  • 220 g sugar, Raw or White
  • 75 g coconut
  • 90 g rolled oats
  • pinch of salt
  • 125 g Butter
  • 1 tablespoon golden syrup
  • 1 teaspoon Bi Carb Soda
  • 2 tablespoons boiling water

Recipe's preparation

  1. Place flour, sugar, coconut, oats and salt into tm bowl 20 seconds on speed 5 Counter-clockwise operation. Set aside.

    Boil min amount of water in kettle.

    Place butter into tm bowl and melt for 2 mins 70degrees speed 2

    Dissolve bi carb with boiling water and add to butter mix for 5 seconds speed 3

    Add mixed dry ingredients to bowl and combine for 20 seconds speed 4-5 Counter-clockwise operation

    If not all combined knead for a few seconds on Interval setting.

    Roll into balls and place on greased tray allow enough room for spreading gently press with fork to flatten slighty.

    Place into oven warmed to 180 degrees and cook for 15 minutes.

Tip

Don't overcook, they will be soft when you put them on tray to cool and will go crunchy when cold.

    These are delicious! I just turned the speed down to 3 with the dry ingredients and added a tad more boiling water at the end which just made them a bit easier to roll. Will be making these on a regular basis - kids loved them!

    These biscuits were delicious! Though in the recipe you haven't said when to put the golden syrup in, I'll admit I almost forgot. Even on reverese I found speed 5 too high to mix the dry ingredients and almost turned all my oats into a fine powder, I simply turned it down to speed 3 and there was no dramas.

    Awesome recipe though and one I'll be saving!
