Apple Cinnamon Scrolls

Ingredients

10 slice(s)

Please enter ingredients in the following order;

Dough

  • 300 g Self Raising Flour
  • 90 g Butter, cut into chunks
  • 150 g Milk

Filling

  • 60 g Butter
  • 40 g Soft brown sugar
  • 1 tsp cinnamon

Icing

  • 150 g white sugar
  • 1 tbsp Boiling water
  • cinnamon sugar, to sprinkle over icing

Apple mix

  • 2 Cooking Apples ie. Granny smith, Peel, core and cut into quarters

Recipe's preparation

    Dough
  1. Pre-heat oven to 210C (190C gas)

    Prepare a baking tray with a sheet of baking paper.

  2. Place flour and butter into mixing bowl and mix 5 sec/speed 5 until mixture resembles breadcrumbs.

  3. With lid set to Closed lid locked position, knead 40 - 60 sec/Dough mode Interval Setting adding milk gradually through the MC hole until a soft dough is formed.

  4. Turn out dough onto ThermoMat or baking paper and roll out dough into a rectangle approx. 25 x 40cm and 5mm thick.

  5. Filling
  6. Place all ingredients for filling into mixing bowl and mix 10 sec/speed 4 or until creamy mixture has formed. No Need to clean out bowl. 

    Apples - Closed lid Turbo about 4 times, leave some texture to the apples, expel as much liquid as you can. Drain over fine colander. 

    Spread brown sugar mixture evenly over dough rectangle.

    Then evenly spread the apple mix over top

  7. Roll up dough from the long side and using a sharp knife (use plastic if using a ThermoMat), cut rolled up dough into 3cm pieces.

  8. Place dough pieces, cut side up, on prepared baking tray and cook in the oven for 20-25 min or until golden brown. Turning tray 1/2 way through cook, for even browning. 

  9. Remove from oven and allow to cool while you prepare icing.

  10. Icing
  11. Weigh sugar in mixing bowl and mill 20 sec/speed 9 into icing sugar.

    Add boiling water and mix 5 sec/speed 3 or until all sugar is incorpated and a smooth texture is achieved.

    Drizzle icing mix over scrolls and sprinkle with cinnamon sugar.

Tip

If you don't care about the colour of the icing you can use raw sugar, the icing will just  be brown instead of white.

    Delicious, hubby gives the thumbs up to this recipe. It’s like a Beautiful scone with a yummy apple filling. I did not use the icing as I found them perfect for my taste. I used a muffin pan to bake mine.

    Follow the recipe! I thought the grated Apple looked pretty dry in the thermie jug so just tipped it onto the dough/sugar - then when I rolled it all up, juice went everywhere! They are just out of the oven now and look and smell great!

    The texture is more like an apple cinnamon scone. Bit dense but still delish. Mine did not rise as hoped either. Next time i will cut a bit thicker than 3cm.

    this is one of my go to recipe for scrolls.  I've also made them with pears. I've not made the icing, they are good without it.

    I made these for my mothers group and everyone commented on how delish they were. Will definitely make these again. I had to cream the filling for longer than 10 seconds to get it creamy. I think I did it for 20 secs and also only turbo'd my apples twice (I think once would have been sufficient).

    Mine turned out nicely but tasted quite floury- I used wholemeal flour and had to add extra- perhaps I should have stuck with white? As previously mentioned be careful with the amount of times you turbo the apple. The cinnamon mix was delish. Would definitely make again but with white flour.

    Delicious!! Enjoyed by everybody tmrc_emoticons.) Only advice I have, is when doing the apples, check them after each turbo. I used turbo twice before i checked on the apples and they were very very fine already, I would hate to think what they would have been like after using turbo 4 times...apple puree would be my guess. Next time I will just use turbo once. I also sprinkled the top with a bit of vanilla sugar in addition to the recommended cinnamon sugar! Can't wait to make these again!!
