Apple & Custard Buns

Ingredients

Bun Dough

  • 440 g SR flour (can use gluten free)
  • 375 g Greek yoghurt
  • 2 teaspoons white sugar

Creme Patissere

  • 1 teaspoon vanilla extract
  • 60-100 g sugar, to taste
  • 50 g flour
  • 2 --- eggs
  • 500 g Milk, skim or full fat

Stewed Apples

  • 2-3 --- apples, peeled & cut into 2cm pieces, sweeter the better
  • 5 pieces cloves, whole

Cinnamon Sugar Topping

  • 2 tablespoons sugar, white or brown
  • 1 teaspoon ground cinnamon
  • Milk, for brushing tops

Recipe's preparation

    Bun dough
  1. add all ingredients to tmx bowl.

    speed 6 for 20sec

    speed 4 for 15sec

    scrape down sides of the bowl and again

    speed 4 for 10sec

     

    divide into 10 even portions

    on a floured surface, roll each ball into a bun shape then flatten using either fingers or rolling pin until it is about 3mm thick. Set aside.

  2. Creme Patissere & Apples
  3. place sugar and flour into tmx bowl and pulverise for 20sec on speed 9. scrape down side of bowl.

    place all other creme patissere ingredients in bowl and place varoma on top. In varoma tray place a piece of wet baking paper and the pieces of apple on top.

    Cook custard and apples, topped with cloves for 7 minutes at 90 degrees, speed 4. discard cloves once apples done.

    Allow to cool slightly before assembly step.

  4. Assembly
  5. Preheat oven to 175degrees.

    On each round of bun dough, place approx a tablespoon (or more if room) of creme patissere in the centre and spread out, leaving 1.5cm of dough around the edges. 

    In the centre of the custard, places 5 or so pieces of apple.

    Fold edges into centre and pinch together and flatten the base.

    Place on lined baking tray.

    Repeat for other 9 buns.

    Brush some milk on the top of each bun.

    In a small bowl combine cinnamon and sugar, sprinkle a small amount on the tops of each bun.

    Bake in oven for 10-15 minutes or until brown.

    Ok. Apples didn't cook in varoma, will cut finer next time. First 5 cooked at 170 for 15 a bit doughy, the second 5 190 for 20min - better bun texture. Great idea.

    I made these buns late yesterday afternoon...all gone by bedtime.  Yummy.  Making more today but hiding them so the teenagers can't find them so easily.
