Dry Ingredients

  • 75 g rolled oats
  • 135 g wholemeal flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 75 g brown sugar

Wet Ingredients

  • 120 g milk - soured with the juice of 1/2 lemon (or buttermilk)
  • 190 g apple sauce (made from the Everyday Cookbook)
  • 2 tbsp Grapeseed Oil
  • 2 tbsp agave syrup/nectar (or honey)
  • 85 g blueberries

Recipe's preparation

  1. Preheat oven to 180 degrees Celsius.

    Place oats in the TM bowl and mill for 4 seconds on speed 9.

    Add rest of dry ingredients and mix for 10 seconds on Counter-clockwise operation speed 4. Set aside.

    Add wet ingredients to TM bowl and mix for 10 seconds on Counter-clockwise operation speed 4.

    Add dry ingredients and mix for 10 seconds on Counter-clockwise operation speed 4.

    Spoon into a muffin tray lined with paper cases.

    Sprinkle each with blueberries and press into the batter a little.

    Bake for 16 - 20 mins.

Tip

These muffins are quite dense (but filling) so don't expect a light fluffy muffin.

    These were quick and yummy. I had no eggs and was craving cake....think they’ll be a regular here!
    We made mini muffins and just put 1 berry in each. Kids enjoyed too!

    I used white flour, doubled the recipe and reduced the sugar. They turned out light and delicious, could further reduce the sugar.

    These are nice little mufins, a little more work than regular muffins but worth the effort, I didn't find heavy at all but soft tmrc_emoticons.)

  • When I first put this recipe

    When I first put this recipe together and tested it, I put the
    blueberries in and mixed on reverse on a low speed for a few seconds.
    The result was a greyish green very unappealing batter and cooked
    muffins with the same unsightly tinge. They tasted wonderful but looked
    terrible LOL!
