APPLE STRUDEL MUFFINS

muffins

  • 320 g plain flour
  • 10 g baking powder
  • 5 g baking soda
  • 5 g salt
  • 80 g Butter
  • 150 g raw sugar
  • 2 eggs
  • 1/4 stick vanilla bean
  • 250 g apples, fresh, grated

topping

  • 50 g packed brown sugar
  • 10 g plain flour
  • 5 g ground cinnamon
  • 30 g Butter

Recipe's preparation

    Method
  1. Preheat oven to 180 C.

    mill sugar and vanilla bean together, 10 secs speed 10, place in separate bowl.

    mix topping together by placing ingredients in TM bowl and mix 10 secs speed 5 or until breadcrumbs form.  Set aside.

    beat together eggs, butter and sugar 10 secs speed 4. Add apple, just cut in 1/4 and core, no need to peel, mix 10 secs speed 6.  Add flour, baking powder, baking soda and salt, mix well 10 secs speed 5.  

    Spoon into silicon moulds x 12 and spoon over some topping mix on each muffin.  Bake in the oven for 20 mins.  Allow to sit for 5 mins before removing from moulds to cool. Enjoy!
