Vanilla Custard
- 40 grams raw sugar
- 1/2 vanilla bean
- 40 grams cornflour
- 2 eggs
- 400 grams milk.
Cake
- 180 grams Butter
- 120 grams castor sugar
- 3 eggs
- 1 teaspoon cinnamon powder
- 3 heaped teaspoons baking powder
- 200 grams flour plain, Or spelt flour
- 50 grams Milk
Apple
- 2 apples quartered
- 1 heaped tablespoon castor sugar

Recipe's preparation
Place vanilla bean, sugar & corn flour into bowl mill for 20 secs speed 10.
Scrape down sides of bowl & add remaining custard ingredients cook for 7 mins 90 degrees speed 3. Scrape custard from the bowl & set to one side. No need to clean the bowl before making the cake mix.
Place butter & sugar into bowl & mix on speed 5 for 10 secs. Mix for a further 30 secs on speed 5 adding each egg separately. Add all remaining cake ingredients & mix for 5 - 10 secs on speed 5.
Place half the cake mix into a lined (with baking paper) 20 cm cake tin.(Place the other half to the side in a bowl)
Spread the custard over the cake mix in the tin.
Place apples into TM bowl (no need to clean it after the cake mix has been taken out) chop for 3 secs on speed 5. Place half the apple mixture on top of the custard. Then spread the remaining cake mix on top of the that followed with the remaining apple & sprinkle with castor sugar.
Bake in a 170 deg oven for 1hr.

Sadly I’ve attempted this cake 4 times and 3 times has been an epic fail in various ways. 1st time it just didn’t cook through the middle but was so dark- almost burnt on top, 2nd time the cake again was just way to soft in the middle and despite leaving it to cool completely- the outside was dry and the middle fell apart when spring form cake pan was opened. 3rd time it was extremely dry again but cooked through.
The fourth time, i varied recipe and had ok results. I suggest lowering the cooking temp to 160 and baking for 90mins (1hr 30 minutes)- this kept the cake from drying out and burning on top, but gave the middle long enough to cook properly. Definitely don’t pull cake out of pan until cooled completely, it will fall apart! Serve straight from cake pan if you can as it’s just way too soft to transfer onto another cake plate.

Loved this and didn't find it dry at all, even on day two. I used two new-season apples, fresh from the Farmers Markets so maybe that is the secret. We ate some for breakfast on day two and then to eke it out for dessert, I made my go-to Butterscotch Custard to pour over the top, and this turned out to be perfection. I didn't realise until I looked it up to properly credit the recipe owner that it is also one of ArwensThermoPics' recipes. Thank you for both recipes!

Loved it. Took custard cooking out to 10 minutes after reading everyones comments. Perfect! Possibly could have added a bit more cinnamon for my taste but all in all- very nice and will definitely mnake again.

Thanks for the recipe. Made this yesterday. It smelt sooo good whilst cooking and tasted sooo nice too! My custard was a tad runny, but will definitely make it again, everyone loved it.

Took this cake to a friends for dessert tonight and everyone loved it. I grated 2 apples for the centre and 2 apples grated on top. Yummy!

Yummy Apple custard cinnamon
Yummy Apple custard cinnamon moist cake. I added an extra 2 minutes to the custard cooking time but everything else exactly as per the recipe. Would go great with ice cream. Next time I will add some walnuts & maybe some coconut.

It was alittle messy to make
It was alittle messy to make but the outcome was great. My husband loved it. I also added on the extra cooking time to the custard and it turned out fine. I misread the recipe and chopped the apples for 10 sec instead of 3 apples alittle mushed up but it still worked. It took alittle longer to cook then an hour but I do have an older oven. I might try it next time with a crumble topping instead of apple and sugar. Will let you know how it goes!

This was a lovely moist cake.
This was a lovely moist cake. However, the custard didn't thicken enough to be able to spread so I had to transfer the mixture into a saucepan and thicken a little more with about 5grams more cornflour mixed in a little milk. It had to boil before it would thicken to spreadable consistancy. I will try upping the temp. to 90 or even 100 deg. next time and see if that works better. No problems with the rest of the recipe except my cake took 15 mins longer than the 1 hour stated but then everybody's oven is different.
