Apricot & Coconut Slice

Ingredients

1 portion(s)

  • 250 g sweet biscuits (I used butternut snaps)
  • 100 g Butter
  • 130 g sweetened condensed milk
  • 100 g dried apricots
  • 50 g Toasted shredded coconut
  • 200 g white chocolate
  • 2 tsp vegetable oil

Recipe's preparation

    Slice
  1. Line a 19x29cm slice tin with baking paper, making sure there is enough paper hanging over the sides to ensure easily removal.

  2. Break biscuits up by pulsing a few times until you have an assortment of sizes and crumbs.  Put aside in a bowl.

  3. Chop apricots 8secs/sp7 and place in the bowl with biscuits. 

  4. Melt butter and sweetened condensed milk 2mins30secs/60°/sp2

  5. Add butter/sweetened condensed milk and coconut to biscuits/apricot mix.  Press into a slice tin and refrigerate for 20 mins.

  6. Icing
  7. Chop chocolate 5-6secs/sp8.  Add vegetable oil and melt 3mins/50°/sp2.  Spread over slice and refrigerate until firm and cut into squares.

    I doubled the recipe but added 250gm of rolled oats instead of doubling biscuits and used Granita biscuits. Also threw in some dates that needed using up and added a whole tin on condensed milk (so i didnt eat the left over in tin). I didnt double the chocolate for topping just drizzled it over the top. YUMMO

    I didn't have a packet of plain sweet biscuits, so I used about 100g of biscuits and then made up the rest with rolled oats. Also added sultana's. Worked perfectly and was delicious.

    This is really delicious and easy. I did tweak it a little bit to my tastes: doubled the amount of apricot and added a bit more condensed milk. I also used only about 50g of melted white chocolate to drizzle over the top.

    Yummy. My eldest son's favourite slice. Great for school snacks. I used coconut oil instead of vegetable oil for the icing part. And I love the fact that it's a no bake recipe  tmrc_emoticons.)
