Baked cheesecake

Ingredients

Base

  • 60 g Almond Flour
  • 200 g plain flour
  • 1 tsp baking powder
  • 120 g cold butter, chopped
  • 60 g raw sugar

Filling

  • 1 lime or lemon, zest and juice, optional
  • 500 g mascarpone/ ricotta/ quark
  • 250 g cream cheese
  • 3 eggs
  • 150 g raw sugar
  • 1 tsp vanilla
  • 2 tbsp cornflour, mix with water
  • 2 tbsp water, mix with cornflour

Recipe's preparation

    Base
  1. Describe the preparation steps of your recipe

  2. Prehat oven to 160C fan forced.

    To make almond flour, add almonds to Closed lid and mill 40secs/ sp9. 

    Add remaining ingredients and mix 15secs/ sp6.

    Press with knuckles into lined and sprayed spring form.

  3. Filling
  4. Make zest by milling 3secs/ sp7. Scrape down sides.

    Add remaining ingredients -except water and cornflour mix- and mix 10secs/ sp 5. Scrape down sides, add water and cornflour mix and mix again 10secs/ sp5.

    Pour into spring form on top of base and bake in oven for 60-80 minutes or until set. Mine needed about 75mins, but make sure to check after 60mins. If top becomes too brown, you can cover it with aluminium foil.

     

    Remove from oven and let cool in form and refrigerate.

    Usually not a fan of baked cheesecakes but this one has officially converted me. Love that it's a real base not using store biscuits, the almond works so well with the lemon cheesecake. I used rind & juice of 2 lemons, added a tbn honey, blended the rind with the sugar for the cheesecake first & I used ricotta. Winning.

    I'd like to give this recipe 5 stars too ..... made the ricotta in my TM5 first, so easy, with our local unhomogonised jersy cow milk tmrc_emoticons.8) . This must be one of the easiest recipes ....totally made easy by the use of the Thermomix. Awesome base too. Next time would double the lemon juice as I like mine lemonny.

    Ricotta recipe; I used a Thermomix Blogger recipe; ( http://www.superkitchenmachine.com/2011/12574/make-ricotta-thermomix-recipe.html ) .... but the 2 recipes I found on this recipecommunity are essentially the same and should work well.

    Have made this three times and it is always a winner!!! Quick and easy to make, very delicious. Have always used ricotta rather than mascarpone. Supposed this isn't rated highly or commented on previously, maybe a photo of the finished product would look better?
