Baked cherry crumble cheesecake

Crumble

  • 100 g butter, softened, plus extra for greasing
  • 300 g plain flour
  • 1 tsp baking powder
  • 1 pinch sea salt
  • 150 g caster sugar
  • 1 egg

Filling

  • 1 lemon, zest only, no white pith
  • 3 eggs
  • 100 g caster sugar
  • 1 tsp natural vanilla extract
  • 500 g quark, well drained or ricotta cheese, well drained
  • 30 g semolina or cornflour
  • 700 g canned Morelo cherries, drained or canned sour cherries, drained

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Crumble
  1. Preheat oven to 180°C. Grease and line a round springform cake tin (22 cm) and set aside.

  2. Place flour, baking powder and salt into mixing bowl and mix 10 sec/speed 6.

  3. Add 100 g butter, sugar and egg and mix 10 sec/speed 6. Scrape down sides of mixing bowl with spatula, then repeat mixing 10 sec/speed 6 or until combined. Transfer crumble mixture into a bowl and set aside. Clean and dry mixing bowl.

  4. Place half of the crumble mixture into prepared tin then, using the back of a spoon, press down lightly to form a base for the cheesecake. Set bowl with remaining crumble mixture aside.

  5. Filling
  6. Place lemon zest into mixing bowl and grate 10 sec/speed 9. Scrape down sides of mixing bowl with spatula and repeat grating 10 sec/speed 9, until a fine consistency is achieved. Scrape down sides of mixing bowl with spatula.

  7. Add eggs, sugar and vanilla extract and mix 2 min/speed 4. Scrape down sides of mixing bowl with spatula.

  8. Add quark or ricotta and semolina or cornflour and blend 40 sec/speed 5.

  9. Layer cherries on top of prepared base in tin, then pour cheese filling over the top. Sprinkle reserved crumble mixture on top of cheese filling, then place into the centre of the oven to bake for 50-60 minutes (180°C) or until just set.

  10. Remove from oven and allow to cool completely in the tin before slicing and serving.

Tip

This recipe is also suitable for TM31.

Reserve the juice from your cherries to make your own jelly or to use in fruit juices.

Quark cheese can be found in the delicatessan section of major supermarkets or specialty providers.

    I wasn't overly impressed with this recipe. Didn't taste as good as it looked and lacked flavour. Personall I won't make it again.

    Super - easy and yummy. I baked this and took it to work - it was gone in 8 minutes flat. Delicous and super easy. I will make again (but only cook for about 45 minutes). Smile
