Cheesecake
- 250 g plain sweet biscuits
- 150 g Butter Cubed
- 500 g cream cheese, softened
- 190 g caster sugar
- 3 teaspoons Finely grated lemon rind
- 3 eggs
- 55 g lemon juice
Recipe's preparation
Preheat oven to 160°C/140°C fan-forced. Grease a slice tin.
Melt butter at 80 degrees on speed 3 for 1 minute. Add biscuits and crush for 10 seconds on speed 9 until fine crumbs form. Press mixture over base and side of prepared pan. Refrigerate for 15 minutes. Wash and dry bowl to make filling.
Meanwhile, beat cream cheese, sugar and lemon rind together until smooth for 25 seconds on speed 5. Scrape down edges.
Add eggs, 1 at a time, beating each for 10 seconds on speed 8.
Add lemon juice and beat for 45 seconds on speed 7. Pour mixture into prepared pan.
Bake for 50 minutes to 1 hour or until filling is just set (mixture may wobble slightly in centre, but will firm on standing). Cool in oven with door slightly ajar. Refrigerate for 4 hours or until cold. Dust with icing sugar and serve with cream.

I got many compliments on this. I also used Nice biscuits and the back of a metal spoon to smooth it down in slice tray. Next time I would cut the cream cheese into smaller blocks as it took me a little extra time to mix.

Great recipe - cheesecake was
Great recipe - cheesecake was moist and delicious. Notes for self: rind of 1 lemon = approx. 3 tsp and it can be grated in the TMX for a few secs on speed 8 as the first step when making the filling. 85 g of lemon juice gives a great tang which is about the juice from 2 average lemons. Line tin with double greaseproof paper to make it easier to lift / slide onto serving platter. Scotch finger biscuits resulted in a very moist base which was hard to push up sides of tin but doable after a bit of refrigeration - much better with Marie biscuits.

This was soooooo yummy. Made it this morning for my 7 year old son's birthday cake - he requested it. Didn't have time to refrigerate it for the recommended 4 hours, but refrigerated for between 30-45mins. It was so creamy and lemony, and didn't fall apart when we cut it. It was a huge it with everyone...except my 7 year old found it a little bit rich. I cooked it in a 22cm springform pan. Highly recommende it. Thanks for the recipe.
