Banana & Date Muffins

  • 2 bananas
  • 100 g dates
  • 125 g vegetable oil
  • 2 eggs
  • 190 g brown sugar
  • 1 tsp bi-carb soda
  • 1/2 tsp cinnamon
  • 370 g Self Raising Flour

Recipe's preparation

  1. 1. Preheat oven to 150c.

    2. Add dates to bowl, chop for 10 seconds, speed 7.

    3. Add eggs, vanilla, oil & banana. Mix for 20 seconds, speed 5.

    4. Add sugar, flour, cinnamon & bicarb soda. Mix for 20 seconds, speed 5.

    5. Spoon into lined muffin tray & bake for approx 25 minutes.

    Great Recipe! I'm another who used coconute oil instead, and halved the sugar to 90grams (using half brown and half rapadura). They were very sticky so I think adding a bit of milk next will be better... as it was very hard to get them into the paper cups in the muffin tray!lol. But they turned out nice thank you.. tmrc_emoticons.)

    So delicious! Like others, I replaced the vegetable oil with coconut oil and reduced the sugar to 90g (I used coconut sugar) and added an extra banana (I had 3 that were in desperate need of using!)

    The dates add a taste that's almost like sticky date pudding. So Yummy! Thanks for the recipe!

    Kids loved them! Reduced sugar to 80gm and kids put a couple of choc chips on the top. Used a mix of regular flour and spelt as that's what I had and only had frozen banana but they were still greattmrc_emoticons.-) made 21 regular sized muffins.

    I love this recipe, instead of vegetable oil, I add coconut oil, I sometimes add a little bit of psyllium husk just to up the fibre content without my kids knowing, in this case I just add a drop of milk.  These are my children's favourite. 

    Another variation ion is to add some choc chips, the kids love that variation as well

    I used GF plain flour with baking powder, as a substitute for SR flour, coconut oil and half rapadura/half brown sugar - a very dense mixture, but absolutely perfect muffins.  Really, really yummy warmed or cold.

  • I made a lot of assumptions

    I made a lot of assumptions before starting to make these, which was that I had all the ingredients, when in fact, I did not. So I substituted an egg for 1 tbsp of chia seeds soaked in 3 tbsp of water, I used coconut oil instead of veggie oil, frozen bananas instead of fresh and I only had 100g of sugar. I also had to add a splash of milk as the batter was really gluggy. To my delight they turned out quite well! I will have to come back and try the recipe when my pantry has been restocked!

    Also, in step 3 of the recipe preparation it says vanilla is to be added but it wasn't listed in the ingredients. As that was one ingredient I did have, I added 1tps of vanilla extract.

    Made these tonight and they are beautiful! I added some milk to the batter and used 3 bananas as that's what I had to use!  I got 24 muffins out of the whole mixture. Will definitely be using this delicious recipe again!

    I made these yesterday and they are great. Used half coconut oil (melted) and half a light flavoured olive oil and used a reduced amount of coconut sugar. And I used Medjool dates rather than dry. I made about 18 smaller muffins - perfect for lunchboxes. They are beautiful and soft. Thanks.

    Superb! I used wholemeal self raising flour, two frozen bananas and coconut oil in place of the vegetable oil. The batter was pretty stiff so I also threw in 1/4 cup of full fat milk.
