I have baked a lot of banana breads in my time but this is by far the easiest and tastiest. Made to instructions but will try less sugar next time around as I don't think the kids would really notice. A keeper.

    Submitted by auzziechic on 16. January 2023 - 14:45.

I subbed the flour for gluten free self raising, and didn't use maple syrup as I forgot. I think sugar could be well reduced as bananas are sweet and maple is too! I found this quite sweet without the maple and just using the sugar. I had heaps of frozen bananas to use up so this was great way to do that, Will definitely keep in favourites!

Submitted by Carol Millington on 4. October 2020 - 15:31.

Tastes amazing! However, I did have to adjust to dietary needs - I used my Gluten Free flour dregs ( a mixture of Sophia's Kitchen GF flour recipe and the thermomix GF flour recipe - with a bit of fear and trepidation I might add) and also added in about 1/2 tsp xantham gum. I reduced the sugar to 80gm and it was still sweet enough. I might try it with golden syrup next time as that is what is in the original Donna Hay recipe, and I only used 245gm of very ripe bananas. I made mine in a smallish bread loaf tin - 17cmL x 11cmWx10cmD) so that it came out like the Cafe Banana Style Bread. The little that was left over still tasted great the next day.

A big hit with the family, had slightly less maple syrup but still turned out fine and also added in 90gm dark choc chips instead of walnuts (didn't have any on hand). Will reduce the sugar slightly next time. Definitely saving this recipe for next time!

    Submitted by rkt on 9. July 2019 - 09:20.

Absolutely delicious banana bread - my kids' favourite! I have made it numerous times and tweak the ingredients as I go. I use coconut sugar and reduce the amount to 100g. I also use 60g rice malt syrup instead of maple syrup and 1/2tsp of cinnamon. I also omit the walnuts. As long as you have ripe bananas, I don't think there is a need for a lot of extra sweetners.
