Banana Cake
- 120 grams Butter
- 120 grams sugar
- 2 eggs
- 250 grams SR flour
- 120 grams Milk
- 2 Large Ripe Bananas
- 1/2 teaspoon bicarb soda

- 100 grams cream cheese, cubed
- 230 grams icing sugar
- 50 grams Butter

Recipe's preparation
Grease and line a 23cm spring form pan.
Melt butter in the TM bowl at 60C for 2 minutes on speed 4.
Add sugar, eggs, flour and milk and combine on speed 5 for approximately 30 seconds.
Add bananas and bicarb soda and mix on reverse for 15 seconds on speed 3.
Pour mixture into pan and bake into a pre-heated moderate oven for approximately 40 minutes or until cake springs back.
When cooled slightly, turn out on to a wire rack to cool completely before spreading the topping over.

I made this into a sandwich cake, using gluten free flour, also used a little vanilla essence in the icing.
Turned out delicious also used 3 bananas which helped make it moist, as gluten free flour can make a dry cake.

Beautiful and fluffy cake and the icing made the perfect amount. I also added the banana and wizzed for 20sec at Spd 7 before I added bicarb & cinnamon and reversed for 15sec.

I set oven to 180 as unsure
I set oven to 180 as unsure exactly what temp to use. Cake was still very raw inside after 40mins. increased temp slightly and cooked for about about 25mins, checking periodically and finally cooked perfectly. Tasted delicious!

Thanks for a great recipe. I used spelt flour in place of normal flour and baking powder instead of bicarbonate of soda. I reduced the sugar and used rapadura sugar. I used 4 big overripe bananas. I used a different recipe for the icing as this one had far too much sugar but otherwise a delicious banana cake.

Mine flopped a little bit as I got a bit heavy handed with some of the measurements and tried to add extra of other stuff to even it out but didn't quite work so definitely needs to be accurate but it still tastes awesome!!! Thanks!

I've baked this twice in the
I've baked this twice in the past couple of weeks and it's been great each time. I did add a couple of squirts of lemon juice to the icing and a little extra icing sugar to compensate. I also mixed it for twice as long when I added the banana so it wasn't so chunky and it was good as well. I will say that you have to be pretty precise with the measurements (I did bake it once and it flopped - think I added a tiny bit too much butter and milk, plus I wanted to try cooking it at 165oC instead of 170oC and it didn't turn out too well - still tasted great, but looked awful).

Have made this cake twice in the last 2 weeks for different events, and both times it was a big hit.
I broke up the bananas into chunks and didn't bother to mash them in; the cake still had a very strong banana flavour, with nice gooey banana bits throughout it. My 2yr old nephew loved that!
I used rapadura sugar for the icing the second time I made it, and it was still delicious with a good consistency.

YUM!! Made this today and it was absolutely delicious!! (you might want to try and edit the method though to say to mash the bananas, I used speed 8 for about 30 seconds and that was enough before putting on reverse speed for the 15 seconds). Now to remember to take the cake to work tomorrow so that hubby & I don't eat it all lol
